Almost 10 years on, and here I am re-watching to review for an Irish Stout brew day. But in doing so, I have decided to take a shot at Chip's Odd Chocolate Stout. Just need some Cali Common Yeast.... I miss Brewing TV.....

I'm in the UK and didn't discover BTV until 2020, when I started brewing all grain - I watch these videos time after time and never get tired of them.

video and information are put together so well. You guys do a great job!!!

13:00 minutes in, they are totally right. Sometimes light colored beers are insanely hoppy and bitter, and the black beers are sweet as pie. So color doesnt say too much about how strong a beer is. Needless to say, I love them all.

Mr. Dawson, I never tire of your flair for literary references, but when you compared choosing an 1880's Stout to a modern interpretation as "Sophie's Choice", now that just cracked me up. Keep up the good work, citizen.

I was the guy that didn’t like dark beer. Then I started drinking it at higher temps.. Wow what a difference. I could actually taste all the characteristics. I’ve never looked back.

Love all the stuff you were saying about "Dark vs light" beers being a myth. People seem to think that dark beers are more hardcore, but if anything you could argue that they tend to be more approachable than a (relatively) bitter pale ale.

If you can get them a small amount of bullion hops 20g or so in the bittering, very nice.

Hey im an irishman , i have gotta do a stout related science experiment for college, and i do love guiness. But chocolate stout and cherry stout sound incredible. I will probably set up a micro brewery for myself in the next few years. But i would be looking forward to the results. Any tips for a beginner would be much appreciated! Thanks

Jakeen is just Caighdeán (Standard Irish) with a Dublin accent, so don't worry about that I'd say. The Ulster dialect does have a good few similarities with Scots Gaelic because Ulster was Gaelic's last stop before Scotland, y'know? It is, I just wish more of my compatriots would share that appreciation for it, and of course our diverse, long-running history in the production of alcoholic beverages :)

Watching this episode as I brew an oatmeal chocolate stout. Brew on.

So I brewed the NB Irish Stout about a month ago and now have it on nitro tap. It's my first. What CO2 volume are you guys carbing that keg to??? I think I've gone over carbed and had solid foam with a creamy head that would soon start to look like a pancake cooking on a griddle. Good cascade with tight creamy white head but with larger bubbles popping up, within minutes losing head entirely. I purged til flat, and now can't seem to get the carbing volume down.

It is a refractometer that is used to measure the specific gravity (amount of sugar) in your wort.

I do a ton of 1 gal batches and only use foil.

I find nitro gives a lovely smooth mouthfeel, but it does seem to affect the taste

I love what I have been learning here. I have discovered I have a stunted perception of what beer and ale actually is, beyond hops and carbonation. Reading about the beer of old Egypt, I realized I would not have recognized it as beer. They were making and drinking what the English, much later, would call "small beer", which does not refer to the size of the glass.😂 The Egyptians had a legend about using beer to save the world world from an angry blood drinking goddess who had decided to kill all humans. They filled every container with beer that had been dyed red. When angry goddess appeared they all ran and hid. Thinking the vessels were full of blood, she began drinking all she could find. Soon she got so happy she no longer wanted to drink the blood of humanity. They had a big three day beer and hedonism festival every year, to celebrate the event. This would be before Islam came to Egypt. The good old days when beer brewing was a family affair. 😇

As an Irish person and an Irish speaker (which I encourage in all Irish people for fear of becoming a homogenized west british tourist attraction), I can safely say it's pronounced as "shaw-idj goss-in". I wouldn't blame your conclusion though, Irish phonology is difficult, sometimes even I don't know when to pronounce "s" as "sh" and leave "dh" silent.

i agree that darkvslight bs is just that bs. for me it just depends on the feel of that day.

THAT MYTH. I tell people alll the time that guiness is the only beer that tastes like water to me. But you know....those dark beers. Better drink an IIPA since it is light.

I hadn't had guineas in a long time, but after drinking a lot of stouts lately I had a guineas on tap and was blown away at how light the flavor really was, much weaker than I remembered...I'm trying to dispel the dark beer myth one person at a time, because I love stouts and hate having people snarl at them.
