Holi Special Paan Rasmalai ✨

Rasmalai is a favourite amongst most people and for this Holi, I added a festive twist on the classic Rasmalai with a Paan-infused delight!

Here’s how you make this recipe at home ☺️
Ingredients:
~Rasmalai
•1 L Tonned milk or any milk of choice
•1.5 Tbsps Vinegar + 3 Tbsps water
•1 tsp cornflour
•2-3 Tbsps Gulkand
~Sugar Mix: •1 cup sugar
•4 cups water
•3-4 Cardamom pods
~Paan Milk
•5 Paan Leaves
•1/2 Cup Milk
•1 tsp Fennel
•2 tsps Rose water
•4 Tbsps Sugar
•2 Cups Milk
•2 tbsp Milk Powder
•2 drops Green colour (optional)
To garnish:
•Silver Varq
•Pista Flakes
•Rose Petals
Process-
- Heat the milk until it comes up to a boil turn off the heat and cool the mixture down, add the vinegar mixed with water to curdle it
- Strain the Chhena a into a muslin cloth and set it aside for a few minutes to drain off
- Knead the chhena with the help of the heal of your palm- add cornflour and continue kneading until its smooth and there are no cracks
- Form balls and optional fill it with gulkand in the centre
- Make the sugar syrup by boiling water, sugar and 3 pods of cardamom together
- After it comes to a rolling boil slowly add in the chhena balls in the syrup and cover it
- Let them cook for 10-15 minutes until it gets double in size
- Transfer the chhena balls carefully into ice bath to avoid it from disintegrating and let it sit there for 10 more minutes
- For the paan milk , blend the paan leaves with fennel seeds , half a cupof milk and rose water
- Heat the rest of the milk , milk powder , strained paan milk and sugar - optionally add in green colour
- Cook this for 15-20 minutes until the milk mixture thickens up
- After the milk reduces and starts to thicken turn of the heat
- Let the milk cool down completely, add the chhena balls in the milk one by one
- Set it aside for 2 hours or overnight until it soaks up the milk
- Garnish with rose petals, silver warq and chopped pistachio and Enjoy!

    Shouldn't the ras be a bit thick..... It looks watery..... 😅.... Not an expert.... But Maa always made it a bit thicker.... Sorry, if I overstepped 😅
