INGREDIENTS:
3 pounds chicken wings or drumsticks (or a combo)
For the brine/marinade:
3/4 cup soy sauce
1/4 cup kosher or sea salt
8 cups cold water
Hoisin Glaze:
1/4 cup ketchup
1/4 cup honey
2 tablespoons brown sugar
2 tablespoons lemon juice (or juice of one lemon)
1 1/2 tablespoons Hoisin sauce
2 teaspoons neutral oil (canola, safflower, avocado)
1-2 teaspoons fresh ginger, chopped fine
2 garlic cloves, chopped fine
