ಹಿರೆಕಾಯಿ ಏಣಗಾಯಿ Heerekayi Enegayi Palya Recipe In Uttar Karnataka Style| Stuffed Ridge Gourd Curry

Stuffed Ridge Gourd Recipe is a must try vegetable curry. This dish is made by stuffing onion and Coconut masala into the cylindrical shaped ridge gourd pieces and then sautéed until they turn soft and juicy. The stuffed ridge gourd is then cooked along with some more leftover masalas until it has observed all its flavors.
Ridge gourd has always been a part of Ayurveda diet, this is because of the increase in Vitamins C, Zinc and Antioxidants. It has also been used extensively in most of the cuisines across India.

    Thank you so much for your lovely comment. Gurellu powder is nothing but black Niger seeds powder . Roast Niger seeds for 2-3 min and grind into powder . You can Store it for 15 days .     Thank you so much 🙏 Here in Uttar Karnataka we use gurellu pudi for almost every palya it really enhances the taste. And making of gurellu powder is very easy , roast it for 2 min , allow it cool down and grind. And you can store it for 1 week in air tight container. 😊

    Herakai stuff ... Method...Fry 1 tsp oil, 3 tsp groundnut, 1/2 Onion, 5 garlic, 3 chilli, curry leaves, jeera , 3 tsp dry coconut, turmeric Coriander leaves jaggery, tamarind ,salt,... kuchellu pudi. added 1 capsicum also
