    As a graduate student and then temp worker in the early 90s, I was an omnivore who tended to keep meat as very much a special occasion food that I only ate at restaurants. My go to meal prep was a big pot of brown rice and lentils cooked together and topped with whatever veg I had on hand. This is a huge step up from that. Thanks for the lunch prep inspiration!

    When I first started to transition to vegan, i knew these flavorful and very varied legumes would be my gomto food. Now fully transitioned and i am still gaga over them. This is another fabulous opportunity to learn other cuisines. I love them and thank you for incredible recipes and stories. Abrazos querida☝🏽

    I really like the idea of meal prep when you cook up a few different components and keep them seperate, then mix and match. This looks so good I watched it twice, can't wait to make it, beans are my favorite food but I also always have lentils on hand.

    I always have all the lentils in stock😌 black, brown, red, yellow✨ Also, the green cauliflower isn’t actually cauliflower, it’s a crossover of between broccoli and cauliflower and is called Romanesco🌱 never been able to find the gorgeous purple cauli here in Germany🥲 and this bowl looks ✨amazing✨😮‍💨

    I love hearing the preparation sounds. FYI I cook quinoa in my rice cooker on the white rice setting. Easy peasy.

    That bowl looked amazing! I love lentils. I usually cook the green kind in my instant pot with veggie or vegan chicken broth. I use them in soup, salad, pasta, quesadillas/tacos, and even just with rice is so good. I may try lentil patties or meatballs next.

    You could try! I soak mine beforehand (overnight for the bigger lentils and a couple of hours for red lentils) and check on them every half hour, regardless of whether they are in the rice cooker or on the stove. If they are soaked properly an hour in the rice cooker should do it (you can Google for the recommended soaking time).
