Method 1 is not good. You have created impedance mismatches at the junction and will have signal integrity problems. Method 2 is much better but how well does it compare to just crimping couplers which is the standard method. The problem is that you see how well the conductor has maintained its distance within the insulator and there could eventually be a short between the conductor and the shield.
