why disengage the clutch a 2nd time after shifting?

Double clutching. On old cars you «have» to do it. Completely unnecessary on modern cars and vehicles.

I guess it saves wear on the synchros, at the expense of wearing out the clutch mechanism. You might laugh, but my clutch pedal broke once (VW cheap parts)

You may have missed the why, in the video. There is no synchro on third gear. but all double clutch is what it says "Double clutch". If you ever get the chance to drive a pure crash box manual, you will fully understand about DC gear shifting. Note: it is not required on full synchromesh gear box.
