The final adobong sitaw recipe I ended up using:
Ingredients:
- A bunch of sitaw (or other string beans)
- A can of shitake mushrooms (or fresh if you have)
- 1 tbsp apple cider vinigar
- 1/4 cup soy souce
- 2 tbsp sugar (brown sugar if you have)
- 5 cloves of garlic miced
- some ginger crushed (thumb size)
- black pepper to taste
- 1 tbsp cooking oil
- 3 tbsp water
1. Heat up the oil and fry the garlic and the ginger for 1 min.
2. Add the mushroom and fry it for an other 3-4 mins.
3. Add the string beans.
4. Add the vinigar, soy souce, sugar and black pepper, mix it well.
5. Cover the pan and saute the vegetables, until the string beans become soft and soy souce thickens.

Local vinegar becomes more mellow the longer it cooks, and its not as acidic as other vinegar. Apple cider is pretty close though if you used a local brand. It's easier to achieve the adobo flavor with meat because of the slow braise. But with veggies its different. Since they cook so fast I let the sauce develop for a while before adding the vegetables. Most of the time I cheat -- just get the adobo sauce from a pot of chicken or pork adobo then make a veggie adobo from that. It works with long beans, baguio beans, kangkong, etc. Veggie adobo can get sour when eaten alone so use only a little sauce, unless you eat with lots of rice like most locals. I enjoyed your video; it reminded me when I first tried to cook adobong sitaw.

Hello Susie, about the cooking, you can use teaspoon or tablespoon as measurement tool for the ingredients, nice video again.

When it comes to adobo, I prefer chicken adobo aloha (adobo with pineapples). Not sure if it will work with string beans but you can try it if you are not into the strong vinegar taste of regular adobo. And since you mentioned your dog likes vegetables, you can try the vegetable/fruit challenge for dogs. I've seen it done by dog-related youtube channels. It would be fun for us to see what tropical fruits and vegetables your dog likes.

in my opinion straw mushrooms are way tastier and alot cheaper than shitake you only need them for the glutamic acid that tricks you into thinking you are eating meat a good choice for Vegan adobo so good job for sure and really nice well put together vlog .. I will be back

haha, try again. When you add the vinegar you can't touch the food for about 10 min or 15 min. The vinegar needs to boil out. If you stir it the sour will not boil out. If you really don't like the sour you can boil the vinegar seperately for 10 min then add it to the food. Good luck. Don't worry, many filipinos can't make adobo. I had a friend that added potatoes then stirred the vinegar into the potatoes. That was a tough dinner.

Hi Ate. Just advice , when you adding suka to any dish you are cooking, don’t mix it immediately, let it boil for a few minutes first so the strong sour taste of suka will not be over powered. Thanks and happy cooking 🧑‍🍳

I suggest you buy a stock of different snacks (maybe two of the smallest size pack). Then when you don't have a prepared topic for a video, you can do a snack reaction video using four or five different types of snacks.

Susie - The adobo will work delicious with Tofu as the meat replacement. Try Tofu, pineapple, potatoes, bell peppers, even hard boil egg.

Hi Susie, I wish to thank your nation that our Philippine government got €530 MILLION AID from Hungary recently and aside from the cash grants, your government, along with the United Nations Food and Agriculture Organization, also offered scholarship slots for 40 Filipino post-graduate students taking up agriculture courses.
