생두나 추출환경에 따라 다르지만 원두에 숙성이라는 개념이 없기때문에(대신 디게싱이라는, 가스를 분출하는 기간을 말함) 향미가 많이 날아가지 않은 기간이 얼마 안된 콩을 선호합니다 :)
