This looks a fantastic option. I'm always looking for new ways to get the deer I shoot on the table at home. We love venison shanks. We love pie and mash.. venison shank pie and mash. What could be better! Great to have your channel as an inspiring resource, thanks, Mike!

Inspirational! I've got Fallow and Roe in my freezer and a Munty hanging up in my shed to process tonight. I've alreadt had the Fallow shanks in mint sauce as it was a young animal that is cooking up like lamb - but I think the Muntjac was older and will need braising...

is there a benefit to deglazing with vinegar before adding the sauce? in other words--would deglazing with the sauce have the same effect, or is does the vinegar behave differently as a deglazing agent?

Not saying you don’t, and this isn’t a criticism but a genuinely interested question, why did you take two males and not females? If you want to control numbers shouldn’t you take more females than males?
