Pizzoccheri della Valtellina is a type of short tagliatelle, a flat ribbon pasta, made with a blend of buckwheat flour and wheat flour, cooked along with Savoy cabbage, and cubed potatoes. This mixture is layered with pieces of Valtellina Casera cheese or ground Grana Padano or Parmesan, and dressed with Salvia, garlic lightly fried in butter.
