What is the name of those double monitor probes you use ???

@markschaffer167 Our favorite probes are the Tappecue Touch version. You can see that here: shorturl.at/cdwX0 The Wifi monitoring works great, and you can run up to 8 probes with splitters. For everyday use with the Camp Chef XXL Pro, the built in wifi control and dual probes works great! With both, we can run up to 10 probes...although I don't know why you'd need too haha. Just found your channel - - you have some really GREAT content!!! I am a new subscriber and very excited to see future, related content. Your practical approach matches up with my intent to create tasty food for my family and friends. QUESTION: What are your thoughts of using this smoker to support long resting periods (e.g. over night rest of 6-8 hour for briskets) by setting to 150 degrees and smoke level of 1 (low)?

Hi @andrewconnelly4893 and welcome aboard! Boy have you come to the right place. First, Go order this book: amzn.to/3LDD2Nr THat is going to take you to a whole new level very quickly. I also includes a primer on making your own sauces and ribs. I have a video coming out this weekend on a massive wing cook using this same smoker. It turned out great! As for resting long term on a brisket, I don' think it's needed. I've worked with the winningest man in BBQ (Myron Mixon) and he's won something like $7M in contests. It would blow your mind the things he DOESN'T do and still wins! An hour is so wrapped is plenty. It just lets all those flavors meld together and allows the temp to stabilize through out the meat. To give you an idea, He cooks brisket at about 300*, wraps it at 165It and it rarely gets much of a rest before slicing and arranging for turn ins. Then he beats guys that stayed up all night with 24 hour cooks, haha. Myron's books are also a great resource. Thank you for watching! How does the smoke get through those casings?

@chadwallace3598 fibrous casing are permeable for smoke. it passes into the meat just fine. I ran this cook with just the pellet smoke to test it out. I will be using the solid fuel drawer next time to add some more charcoal or wood smoke flavor. There was enough smoke flavor for most people but that drawer is there for those of us that like things a little smokey-er haha Thank you for watching! I was thinking of getting a Camp Chef pellet grill. Do you think you could smoke those in a regular pellet grill?

@jqcargle YES. You can always smoke on a Camp Chef pellet grill. What you really can't do is grill on a pellet smoker. The Camp Chef Woodwind Pro is the best pellet grill out there for total package in one unit. Just ley your SS on the grates or elevated jerky racks (preferred) and let er go. Thank you for watching! How many pounds of summer sausage do you think you could fit in this unit? this would have been about 20 pounds I think. Is that about all it will fit??

@garrettareiss this was a 26# batch. I think you could get 30# in it laying them down on the racks, possibly 35#. I could have fit 2 more on the hooks it comes with.
