INGREDIENTS:
For Momos:
* All-purpose Flour/Maida(मैदा) - 1 Bowl
* Salt(नमक) - Some
* Ice Cold Water(ठंडा पानी) - As required
For Filling:
* Spring Onion(हरी प्याज)
* Capsicum(शिमला मिर्च)
* Cabbage(पत्ता गोभी) - some
* Carrot(गाजर)
* Salt(नमक) - As per taste
* Black Pepper Powder(काली मिर्च पाउडर) - 1/2 Tsp
* Sugar Powder(चीनी पाउडर) - 1 Tsp
* Ginger-Garlic- Green Chilli Paste(अदरक-लहसुन- हरी मिर्च का पेस्ट)
* Oil(तेल) - 1 Tsp
For Garlic Chutney:
* Dry Kashmiri Red Chilli(कश्मीरी लाल मिर्च) - 4-5
* Dry Red Chilli(सूखी लाल मिर्च) - 4-5
* Tomatoes(टमाटर) - 2
* Garlic(लहसुन) - 8-10
* Oil(तेल) - 2 Spoon
* Kashmiri Red Chilli Powder(कश्मीरी लाल मिर्च पाउडर) - 1 Spoon
* Water(पानी) - Some
* Salt(नमक) - As per taste
* Sugar(चीनी) - 1 Spoon
* Maggi Masala(मैगी मसाला) - 1 Sachet
For Mayonnaise:
* Cold Milk(ठंडा दूध) - 2-2.5 Tbsp
* Potat(आलू) - 1 Boiled
* Salt(नमक) - As per taste
* Sugar(चीनी) - 1 Tsp
* Fresh Milk Cream(मलाई/क्रीम) - 2-2.5Tbsp
RECIPE:
For Momos Red Chutney, take some Whole Kashmiri Red Chillies & Whole Red Chilli & soak them in water for 1-2 hours. Take a mixer jar, put the soaked Kashmiri Red Chillies, chopped Tomatoes and some Garlic in it, and grind them. Take a pan, put some Oil, Kashmiri Red Chilli Powder & the red paste in it by filtering it with a strainer. Then put some Water, Salt, Sugar & some Maggi Masala in it and cook it on slow flame. In this way, Red Spicy Momos Chutney will get ready.
For Mayonnaise, take a mixer jar, put some Milk, Boiled Potatoes, Salt, Sugar & Fresh Milk Cream in it & churn it. In this way, very Tasty and Creamy Street Style Mayonnaise will get ready.
For Filling, take a bowl, put some finely chopped Cabbage, grated Carrot, chopped Spring Onion, Capsicum, Salt, Black Pepper Powder, Sugar Powder, Ginger-Garlic-Green Chili Paste & some Oil in it. Mix them all then cover it and keep it aside for 15 to 20 minutes. Then put the filling in a cotton cloth and squeeze it and take out the excess water from it.
For Momo, in a bowl, take some sieved All-Purpose Flour, some salt & bind it tightly by adding some Ice Cold Water in it gradually. Then keep the dough in the zip-lock packet & keep it in the fridge for an hour. Then divide the dough into two parts & roll them thinly. Then put the rolled chapati on greased idli mold & press it with your fingers. Put the filling in it & keep the other rolled chapati on the filling & press it properly. In this way, make the Momos. In a pan, put some Water for boiling, and keep an idli stand on it. Cover & give them steam for 10 to 15 minutes. Serve the Street Style Veg Momos with homemade Creamy Mayonnaise and Red Spicy Chutney.
