Is this video I show you how to make a Creole Gumbo recipe, that is just absolutely the best you will ever have. I will take you from making a great seafood stock, to making a seafood base to add a fantastic seafood flavor into your gumbo. Watch as I give away some of my long held secrets for making a Seafood Gumbo that is sure to please!

RECIPE
Ingredients
FOR BROTH
Gulf shrimp 5 Pound, cleaned and washed
Blue crab 12
Crab meat 1 Pound (Fresh)
Water 1 Gallon
All purpose seasoning 1 Tablespoon
Celery 3 , chopped
Carrot 3 , chopped
Onion 1
Garlic 1 Clove (5 gm), quartered
Bay leaves 3
FOR REDUCTION
Olive oil 1 Tablespoon
Onion 1⁄2 , roughly chopped
Garlic 4 Clove (20 gm), chopped
Water 2 Cup (32 tbs)
Salt 1 Teaspoon
Freshly ground black pepper To Taste
All purpose seasoning 1 Teaspoon (Frog Bone)
Worcestershire 1⁄2 Cup (8 tbs)
Lemon 3 , quartered
Bay leaves 4
Merlot 1⁄4 Cup (4 tbs)
FOR GUMBO
Vegetable oil 1 Cup (16 tbs)
All purpose flour 1 Cup (16 tbs)
Sea salt To Taste
Freshly ground black pepper To Taste
Celery stalks 3 , chopped
Onion 1 Small, chopped
Onion 1 Medium, chopped
Chopped garlic 1 1⁄2 Tablespoon
Bay leaves 5
Fresh thyme 2 Tablespoon
Canned stewed tomatoes 29 Ounce (2 Cans of 14 1/2 Ounce)
Low salt seasoning 1 Teaspoon (Frog bone)
Okra 24 Ounce, baked
Sausage 1 Pound, chopped
Dried shrimps 3 Tablespoon
Green onions 2 Bunch (200 gm), chopped
Salt & pepper To Taste
All purpose seasoning 1 Tablespoon (Cajun Frog bone)
Directions
MAKING
For Seafood Stock
1. Take water in a pot. Add shrimp tail and shells along with crab flappers.
2. Season water with frog bone all purpose seasoning. Add celery, onion, carrot, garlic and bay leaves. Season with Frog Bone All Purpose Seasoning.
3. Give everything a good mix and bring everything to boil.
4. Reduce the heat and let everything simmer for hour and a half.
For reduction
5. Heat olive oil in a pot. Add onion and garlic and saute for a few minutes.
6. Add water. Season with salt, black pepper and Frog Bone All Purpose Seasoning.
7. Drop in the remaining shells and heads of shrimp, followed by crab feelers.
8. Add Worcestershire sauce, lemon quarters and bay leaf. Pour merlot wine, give everything a good mix.
9. Let everything cook for about 30 minutes.
10. Strain everything into a smaller pot. Reduce this down to about 6 tablespoon of reduction (Should be thick and syrupy).
For gumbo
11. Strain the stock and then mix the reduction with the stock.
12. Pour vegetable oil in a skillet, add flour and continue to mix and cook until all lumps are gone and roux is nice and silky.
13. Season with sea salt and freshly ground black pepper. Stir constantly until dark brown (Be careful not to burn the roux).
14. Drop in onions, celery and cook for 3 to 4 minutes.
15. Add garlic and cook for a little bit more.
16. Transfer the roux and vegetables to another pot. Add the stock to the pot.
17. Simmer for sometime. Add sausage, bayleaves and thyme followed by stewed tomatoes and Frog Bone low salt seasoning and dried shrimps
18. Drop in baked okra and some more water. Continue to simmer for a couple of hours.
19. Throw in the blue crabs and cook for another 10 minutes.
20. Add shrimps, green onions and crab meat. Mix that in and then continue to cook.
21. Season with salt, pepper and cajun seasoning as desired.
22. Cool it down and place it in the refrigerator overnight.
SERVING
23. Re-heat the amount you are serving the next day, and Enjoy

    Russ i watch this video of yours time and time again. Seafood Gumbo was may grandmothers specialty and i have never got my nerve up to do it since she passed "God bless her soul" but the more I watch your video makes me more and more want to give it a try

    If u ask 100 folks how 2 make gumbo, u will get 100 different ways everybody makes it. The common thread is that "true" gumbo makers understand the importance of a good seafood-stock. This guy clearly knows that & along with a good roux, his gumbo gota b rock'n steady! Great video!!!

    melvin george I'm right there with you Melvin. Displaced Cajun here, grew up in Houma, LA. I'm not sure who taught this guy how to cook Gumbo, but they had some kind of Cajun blood in them. Hmm, I need to make a gumbo... or perhaps a jambalaya... or roast beef poboys... decisions, haha

    My Grandfather on my Dad's side of the family was full blooded French from Cajun country. I guess my love for Cajun food comes from that, or it could be because it's the best tasting food in the world! ;)

    I used to live in South Louisiana (Houma) to work in an oilfield company, and let me tell you, the food was fantastic.! I miss the days where I enjoyed Gumbo, Jambalaya, Crawfish, Shrimp Pasta, Good sea food, and above all, the warming attention from the Southeners..thanks Louisiana..the men's sport paradise..!!

    Excellently done Russ, thank you for sharing... if only we had the fresh seafood here in the rest of the USA... i miss my Moms creole gumbo... a little ole full blooded french lady who lived her entire life in New Orleans. her's was a little browner, i don't recall her adding tomatoes, or at least i didn't notice, but i do remember her adding a handful of chopped oysters. i guess you'er wondering why I am talking so much about my mom.. Well it's Mother's Day today 05/10/2015 and it's more than just her gumbo i miss... Happy Mothers Day to all the beautiful Moms!!!! :)

    Alabama boy here. I have spent years in Louisiana and I have never heard of using a reduction. Wow! that is definitely a twist I am going to incorporate! Also.... If there is anyone out there that has never tried Conecuh sausage you gotta try it! One can only find it in the deep south. i.e. Alabama, Misssissippi, Louisiana and the Florida panhandle. I also use it in gumbo. To me it is much better than andoulli. This is an awesome recipe. Thanks for sharing!

    I would call this gumbo close to home . The reason I say this is, this is as close to what I remember my mother making, while I was growing up, than any gumbo that I have seen, to this day . When mother would make her gumbo, couldn't wait til it was cooked, but it was always better on the following day . And to me, of course, hers was always the best . It was slightly on the spicy hot side, that while I was eating it, I would sweat from my forehead . Being that I'm from Mobile Alabama, I have tasted a number of seafood gumbo . My mother is almost 87 now, and no where near able of making her gumbo today . Those were truly the good old days . Thanks for sharing the video, even though it has been on KZread for some time now . Man; that's some good stuff !!!!

    The dried shrimp, with the non- slimey okra & the wine in the seafood stock. The seafood stock concentrate. This guy does not play! Very impressed. Different then how I due it, but so much better. This man is a saint, he really cares.

    That was awesome..and I have known about the dried shrimp secret for many years..I would have to buy 2 packs of them..one for the pot and the other for me to munch on while I make my gumbo..hahaha..never thought about the day before..I will do that the next I make gumbo..thanks for the video!

    when I made your version of gumbo I used lobster shells, ( used the heads and tails ) to make my seafood stock along with the shrimp bodies, it was soooo good

    Yeah it was, I live in Vancouver Canada and I go to my local fresh seafood market and buy 2 or 3 lobster bodies for like $4. each, I save all the crab legs, ship shells and lobster tails that I eat then I just freeze them and when I want to make my stock I pull them out and cook it all up and once its all made ( the gumbo that is ) I will freeze it and when ever I want it I will pull out a small container and use it for dinner and my lunch at work the next day

    Yeah, I like to portion a gumbo out in one quart freezer bags after I cook a big pot, and then freeze it. It freezes very well, and really handy when wanting something great to eat, but not in the mood for a long cook. I also freeze shrimp heads and shells, and crab shells and such when I cook seafood to save for a good stock.

    Dang Rus, that was some serious gumbo! Those are some excellent tips and tricks, I've never added tomatoes to a gumbo, sounds really good. A bowl of that would cost you $20 in a restaurant.

    Thanks Tom! The addition of tomatoes and okra is what classifies it as a Creole gumbo. That's the way I was raised eating and making it. I've had it without tomatoes but will choose tomatoes any day over that. Give it a try one day and let me know what you think. It really adds a nice element into the gumbo. $20 in a restaurant is why I make it my self, lol! I ended up with enough to eat two meals with, and still froze over 2 gallons. That's the way to do it ;)

    If there were an Internet Final Four of Gumbo Recipes, this would be a "shoe-in" for one of the top spots! That reduction trick is pretty slick, as are the dehydrated shrimp. If you could even get a Gumbo like this in a restaurant, they'd have to charge an arm-and-a-leg for it. Ingredients & labor for a batch that size would probably warrant charging $25-30 (or so) per bowl. Pretty work.

    This s%^t was amazing...pain in the ass to make,(just takes time--like you said), but i grabbed some seafood from Fayards in ocean springs and gave it a whirl. just an amazing creole gumbo recipe. best seafood gumbo i've ever eaten.

    Hey, you must be really close to me. Fayards is only minutes from where I live. Yeah, a good gumbo takes a lot of work, but always worth the effort, and the best part, is the left overs freeze really good, so you can still enjoy it months from now. Thanks for the feedback, I appreciate it!

    Take Vyvanse like I do, then cook this three hours before it wears off. That way the focus meds wear off right when you get hungry and when the gumbo is done! Lol!

    Thank you so much for sharing this recipe! My husband found it in 2015 and it has been our favorite gumbo recipe. We should know, living on the Gulf Coast! It is also something we cook together and it takes us all day. We LOVE it!!!

    Thank you for calling it a Creole style Gumbo . I could tell looking at the opening pic that you used carrots tomatos wine and Worsterchire sauce . Cajun gumbo is looser , not near as chunky and will never have tomatos in it and no carrots used in stock . What you have there is Gulf coast gumbo you get from New Orleans on east .

    Your video ended up costing me $140 and 12 hours last Saturday. I promised my family that dinner would be ready at 7 p.m - I think we ended up digging in near midnight. Well, well worth it. I love how much effort is put into the stock/reduction ALONE! The flavor is just outrageous. I lived in New Orleans for many years and I've never seen a gumbo done nearly as well as yours.     Yeah, back in the day, gumbo was one of those things you could make inexpensively, but with the price of seafood now days, it can be very expensive, but making a big batch does allow you to freeze a lot of it, and have it over several months, so that does make it better. Thanks for the feedback, I really appreciate it, and I know first hand how much work this is lol! To this day, this has got to be the longest hardest video I've done to date, but it's been well worth the effort! I don't have a straight up jambalaya video up, but I do have a recipe you will love, and really easy to do if you like fried foods. It's always a hit when I make them.
