🍗FRIED CHICKEN: Dip the chicken pieces in an egg wash and then coat in seasoned flour. Deep fry until golden brown.
🇺🇸GUMBO: Saute flour and oil in a pot. Add onions, bell peppers and celery and saute until softened. Add chicken or seafood stock to the pot. Add the meat, gulf seafood & vegetables and 3-4 bay leaves. Cook for 30 minutes. Remove bay leaves before serving.

🍆EGGPLANT NAPOLEON: Coat eggplant slices with italian bread crumbs and fry. Coat gulf shrimp with flour and fry. To make crawfish cream sauce, simmer garlic, add cream, creole seasoning, worcestershire, butter and green onion. Combine and serve.
🍛RED BEANS & RICE: Boil soaked beans in water or stock. Add onions, bell peppers, celery, and sausage. Add thyme and bay leaves. Bring to a simmer for about 2 hours until beans are soft. Continue to add liquid and stir until the mixture becomes creamy. Serve with Louisiana long grain or popcorn rice.
🦀CRAB & CORN BEIGNET BALLS: Mix together plain flour, cornmeal and baking powder. Add eggs and milk to form a batter. Add crab meat, kernels from the cooked corn on the cob and red peppers chopped finely. In a bowl, mix together herbs, lemon and cayenne and mayonnaise. Form little balls from the batter and deep fry until golden brown. Serve alongside the mayonnaise mixture.

    Born and raised, lifelong resident of south Louisiana. The story I was told is that Mondays were laundry day. Red beans could simmer on the stove all day, unattended while Mother was at the river doing laundry.

    Red beans are traditionally served on Monday because back in the early days, Monday was laundry (and other chores) day. You would put on a pot of beans letting them simmer while you do the laundry and would still be able to put a hot meal on the table at the end of the day!

    Red beans are served on Monday traditionally because it was wash day So you prep and start the beans in the morning, let them slow cook all day while the clothes were being washed

    Reading this, it reminded me of a tradition up here in Canada, specifically in Quebec, back 50+ years ago. My mom told me similar stories about growing up, and how baked beans were a normal staple in their meals, and yes they did the same, laundry day usually = bean day for that same reason. Our grandparents were smart people

    I grew up in New Orleans and my momma was a Cajun. Monday was wash day. You could put a pot of beans on the stove and let them simmer for a couple hours while you did your wash. Red Beans and rice are my favorite food in the whole world. They were Louis Armstrong's favorite too. After the trinity, the one thing you must have in your beans is pickle meat along with your sausage and smoked ham hock. If you've got some tasso and bacon throw them in there too. The more the merrier.

    @@SuperSushidog do you or anyone else know what sausage is good to look for in other states? In the sticks in Arkansas.. so far I've learned at least around here, if it has cajun in the name it probably isn't worth the plastic wrapper it's in :S. When I lived in coastal MS I always got it from a local place I think they just made there. And it just aint the same with smoked sausage.

    @@realcukiemonster I like Conecuh hickory smoked sausage made in Alabama. You might find it in Arkansas. Get the small diameter one, not the Cajun one, as it is packed in natural casings so is crisp when you bite it. I used to like the andouille sausage made fresh and smoked in each store by the Rouses supermarket chain. You may have gotten it there, as they have a few stores on the coast in Mississippi and Alabama. But if you can't get it, Richard's isn't too bad for beans or gumbo.

    New Orleans isn’t the only place you can enjoy great Louisiana food, but it is the center of the Creole style of cooking. In Southwest Louisiana in the Acadian area we cook with more spice with plenty of flavor.

    I'm a native Mississippian. And, watching videos about southern cooking & "slave food," whatever the hell that is, brings back so many wonderful memories of my grandmother's cooking. The delicious smell of her collard greens, oven fried chicken, fried okra, tomato gravy, cornbread, & so on. Trust me when I say that there was NO WAY that anyone could escape the amazing aroma of her cooking.

    After my 2 year apprenticeship under a master Italian chef I moved back home to Biloxi Mississippi. I spent the next 20 years mastering French Creole and Southern Comfort food. This episode brings back so many memories and recipes. Good job on this one, French Creole is the epitome of American cuisine in my opinion.

    I absolutely love my state! It’s absolutely unlike any other place in the world! The food is unmatched and our culture is extremely unique! Creole food is by far my favorite food choice! Cafe De Monde is so good y’all! The gumbo is delicious and the beignets are extremely addicting! 😋😍

    So is the coffee! I'm from Houston, but living in Arkansas I drink nothing but Louisiana coffees. I mail order it via Amazon. I visited N.O. several times in the 1960s and 1970s and had the beignets at Cafe du Monde with that wonderful coffee.

    As a 10th generation New Orleanian, I fully disagree. The guy making the red beans didn't even cream them. Also, there was no tasso or smoked meats in them. And the gumbo lady used powdered roux, overcooked her crabs, and didn't even sauté her trinity.

    Don't put it on your bucket list. Go after the Corona thing is over. We visit once a year (not during Mardi Gras). My wife and I leisurely drive down in our too big Cadillac, splurge for a 4-5 Star hotel and Uber everywhere. Be casual, but bring one nice suit/dress outfit for a few late evenings out of super fine dining on a sultry hot evening. After you do it one time, you will be hooked...

    I was born and raised in Louisiana and My older years in NOLA I love every one of these places you share in the video I am glad to see Lil Dizzy in ere as well. I have to say that is one of the things I miss about NOLA. I now live in Mass and I love cooking my own food.

    Little Dizzy's is GREAT!!!!!!!!!!!!!!!!!!! Not only was the food AMAZING the people were so freindly and fun!!! I went to NO with 20 other gf's to celebrate our late sisterfriend who passed the year before. She would have been 40 and she always wanted to go to NO. We got a private bus to take us to the hotel and he took us on a little tour of NO. After traveling and riding around sightseeing we were hungry and he took us to Little Dizzy's. Little Dizzy's had a little more time before opening up but the owner (the man talking about consistency) invited us in early and had everything ready. The cook (the lady making the gumbo) was so so nice to us! IT WAS AWESOME!!!!!!!!!! I cannot wait to go back and eat there again! I recommend anyone visiting NO to go there and check them up!!!
