    As someone whose lived out of hotels before. You haven't experienced frustration until you've prepared a full dinner with a coffee maker. Now I wasn't a trucker but an almost homeless 19yo paying nearly their entire paycheck for weekly stay at a hotel but I can still understand their plight and wanting some good food over the dollar 4 piece or burger from mcdicks*, instacup ramen, or dollarstore frozen dinners. *pricing has changed significantly from late 00

    1:10:45 Regarding the spice/seasoning question at the end- Let me know if this is wrong, but what I've heard is the reason spices/seasonings are listed as "to taste" in recipes is because the base recipe itself is not and can never be "consistent". For example, a recipe that calls for two whole tomatoes has so many variables just with that instruction alone - how large are the tomatoes, how sweet/tart are the tomatoes, etc. Even if you standardize the tomato instruction by weight, the sweetness/tartness is going to vary - even between tomatoes from the same farm. Thus, the seasoning of said dish using that tomatoes has to be done on an individual basis and adjusted "to taste". For example, the chef/cook needs to use their palate to determine "this batch needs more/less salt/sugar/spice/etc than usual to balance the raw ingredients to get to the "standardized" flavor I'm expecting." Also, for kitchens, typically doing things in large batches helps balance everything. In mathematics we call it "regression to the means". For example, if you flip 3 coins, it is entirely possible to get 3 heads and 0 tails. But if you flip 3,000 coins, it's going to "converge" to more or less 1,500 heads and 1,500 tails overall (within a ~5% margin of error). Likewise, in cooking - if making a sufficiently large batch of a soup/sauce/stock/etc, the large quantity of the raw ingredients is going to "converge" to the average flavor profile (i.e. you might have one tomato that's more tart than usual, but in a batch of 100 tomatoes, that one outlier is going to be balanced out by the other 99).

    I love Kerry gold butter. I always get that. It's worth the extra dollar or two , especially if you're using it on bread or waffles , stuff like that. I think that's the best I can get around here. But I am curious, does anyone know of a different brand that is equal or better quality? I figure it'll have to be ordered online. I just wanna try something that tastes different. Im curious what's out there. I do plan on trying cultured butter at some point. Kerry is more than good enough , but variety is nice and I love butter 🐘

    I always consider cilantro to have a bit of a citrus flavor so maybe some lemon balm mint mixed with some Italian parsley could work...ish? Love you guys. Keep these coming. Can't wait for more expansion. I definitely think 1-2 hours is the perfect spot for runtime.

    LOVE doing chicken the way Frenchy did it, though I also add some bacon to cook along on top (and remove) or on the tray...adds to the butter and makes for a GREAT gravy if you're making one! "Recipe is a guideline", maybe earlier in this vid, but same goes for spices...the amount is a guideline. So many thing change spices - temperature, how it's stored, what it's stored in, how old it is...by definition, it's never the same...

    I was born and raised in NYC and left to the West Coast this year. Unfortunately, I feel like Chinese food in NYC’s manhattan Chinatown is not as good as it used to be. I used to get great portions and good ratio of meat to rice and vegetables for the price. Now, I feel like so many of those once-great restaurants offer very little for the price. Even the beef rice noodles are just mashed up beef with no texture at all; like eating baby food. I’m really saddened by this as I can’t capture great food like it once was. Unfortunately, I can’t really say the best concentration of Chinese food in five boroughs is in Manhattan’s Chinatown anymore. I appreciate the pride you and Paul take in the food you serve to your customers at a reasonable price given these times. I wish I can find restaurant owners like Paul who can honestly say that the food has stayed consistent over the many years. Finding places and people like that are a needle in a haystack.

    have you guys thought about reacting to food history type youtubers like Townsends? he does educational cooking of how people cooked in the 1700s, I feel like Frenchie would have some real interesting comments and thoughts on historic cooking since it combines history and food (there is a french onion soup how it was made in colonial days)

    Cilantro/koriander tastes soappy to me, but under a certain amount it is okay and it CAN be good, but above a certain point and it ruins a dish. However, the root and seeds are generally not something that tastes soapy to me, I know that they are "different spices" but at least it is something, if you happen to be more sensitive than I am.

    As one of the 50% who does not have the Coriander / Cilantro soapy gene to me it tastes ‘peppery’. So something with a peppery profile so maybe watercress or arugula would be a substitute?

    No fresh shrimp - wrong. During the season we have boat loads of shrimp daily. I've been a guest on a shrimping boat here. Beautiful spot prawns. I can even get them live, like dungeoness crab. You new Yorkers need to get that in your head... oysters, clams, shrimp, crab, mussels... all alive if we look for it.

    I used to be a hotel cleaner. Trust me. someone cooking wouldn't phase us. The things that were the worst were the people that would leave food on the TV so it would melt into the vents. The smell of bleach kills most of your sense of smell.

    The bathroom is simply the best place to cook in a hotel room. It gets the most cleaning. FYI the comforter gets the least amount of cleaning out of everything in the room. It takes too much to clean every time the room is rented out.

    From what I recall, raccoons dip food into water because they have something effectively similar to taste and smell in their hands. Since cotton candy is such thin threads of sugar it almost instantly dissolves in the water and confuses the raccoon. It's... I dunno, kinda a mean prank.

    Killing me with this podcast. It's a radio in the background while I'm driving. Kerry Gold Butter Chicken à la Paul? The fart stuff: I was driving with a friend, and we slowed down to stop at a traffic light. He kept saying under his breath, "No. Don't stop." I saw some pretty girls in a jeep waiting to turn left, so I slowed enough to be caught by the light. At the light, he let off an SBD. I couldn't breathe. I opened the window, originally to flirt with the girls, but I'm sure they couldn't figure out why I appeared to be having a seizure. Within a few seconds, the girl in the passenger's side has this look of horror come over her face. I think she understood what I smelled, and her friend looked annoyed with her. The light turned green, and I kinda sped off. My friend was laughing his ass off, and I was telling him that that wasn't normal, that he had an infection, and needed to see a doctor. I was dead. 😂 Just one of my many adventures over the past five and a half decades. Vive la Nourriture!

    I grew up thinking celantro was supposed to taste soapy. I didn't realize it was a genetic thing until I was in the 8th grade. The funny part is I love Mexican food and would always get extra cilantro because ot was extra green to add to my food. Btw, I'm apart of the 10% female audience and like Frenchie. Also, regarding why Heard dumped on Depp's bed. At first she tried to say it was the dog, then she admitted it was her but it was supposed to be a joke. The cleaning lady took a picture of the poo and showed it to her boss because she was so appalled and her boss let Johnny know what happened.
