Tire type does not make any difference in GTA5. Recommend Broughy1322’s fact finding videos on how the game coding works

Nick is somehow surprised the suped up beetle with 125's in the front doesn't turn. Btw the same reasons that make you hate these understeer-y cars are the same reasons highly skilled racers and people like me love them. It takes knowledge and skill to know the braking distance and drive them effectively.
