The ducks are dried to extend shelf life. Once dried they don't go off. Just like beef jerky.

Hey. The gentleman from Taiwan said he lived in Hsinchu??!! I stayed in Hsinchu for three months almost ten years ago. It’s known as the windy city. I’m disabled but my Taiwanese language partners invited me and looked after me while I was there ❤❤❤

The reason the government allows street vandors to do business is to ease unemployment.

Street markets like this have been a common sight in China and other Asian countries for centuries. The populace like to shop that way. Look at the Song dynasty painting of Ching Ming. That's the real reason why the government has not interfered to shut them down. As Jerry said, "This is what people want". The government didn't "allow it"; rather it didn't ban it.

Meanwhile in the UK the state would rather make people beg for money than allow street trading (with rare exceptions). Both activities are illegal but the latter is less tolerated and carries greater penalties. I once read a transcript of a debate in the House of Lords where they literally say "We don't want London to be like Hong Kong." The same applies to the whole country, not just London.

I live in the West, Canada. People are super unfriendly to Asian. We have the "Asian hate" here. You are more lucky than me.
