Green Lentil & Oatmeal Loaf Bread❗️Wholesome Baking Made Easy 💯

Today, I will be sharing with you, our new creation of a wholesome and nutritious bread recipe! We harness the hearty goodness of green lentils (not like red lentils, green lentils are accessible to everyone everywhere) and oats to create a rich, soft and delicious gluten free loaf bread that not only satisfies your cravings but also nourishes your body. Green lentils are a powerhouse of nutrition, rich in protein, fiber, and various vitamins and minerals, making them an excellent addition to any diet.
Slice into this wholesome, gluten-free lentil bread and enjoy its hearty texture and rich flavor. Whether paired with your favorite toppings or simply enjoyed with a spread of homemade butter. Be warned, this bread offers an amazing culinary experience that nourishes both the body and soul.
Instructions:
Begin by soaking dry green lentils in water overnight. After soaking, thoroughly rinse and strain the lentils, ensuring all excess water is removed.
Transfer the soaked lentils (yielding approximately 2 cups) to a mixing bowl and add water. Using a hand blender or food processor, blend the lentils until smooth, then transfer to a separate bowl.
If not using store-bought oat flour, blend your rolled oats into a food processor until you get a flour consistency.
Combine the oat flour with the blended lentils, add instant yeast, salt, and honey to aid in yeast activation. Gently stir until all ingredients are mixed, resulting in a sticky mixture.
Brush a 25 X 12.5 cm loaf pan with butter or oil and pour the mixture into the pan, shaking gently to distribute evenly. If desired, sprinkle some rolled oats or other seeds of your choice on top for a delightful finish.
Allow the dough to rise in a warm corner for 20 to 30 minutes, then bake in a preheated oven at 350°F (180°C) for 45 minutes.
Once baked, promptly remove the loaf from the pan and let it cool on a cooling rack
Ingredients for a 10 slices loaf bread:
3/4 cup (150 g) dry green lentils
1 cup water
1 cup (90 g) rolled oats
1 tbsp. instant yeast
1/2 tsp. salt
1 tsp. honey
Butter or oil for greasing your loaf pan
1/4 cup (20 g) rolled oats (optional, for topping)

Lipides : 0,93 g
Glucides : 17,74 g
Fibres : 2,9 g

Followed your instructions to the letter, I have no idea what went wrong but mine is crunchy on the outside and paste in the middle. I even returned it to the oven for 1 hr @ 150 celsius but it didn't change. Was really looking forward to trying this😞

Sorry for you 😥 I really don’t know why it stays runny inside even after 1 hour baking! Was it too runny? Did you made sure your strained well the lentils after rinsing? Also, did you mixed for too long the oat flour? Also, usually if you over mix oat flour, the bread turns out dense and takes longer to bake.

Like any bread, it’s better enjoyed the first day but it stays great afterwards too. I slice mine, put it in a sealed ziplock bag and keep in the fridge for 1 week. I haven’t tried to put it in the freezer (we consume it right away) though 🙏
