How To Make Apple shaped mousse cake [ASMR]
First created by pastry chef, Cédric Grolet, Paris, this apple lookalike cake is not only delicious, but definitely very captivating!
The moment I saw this on social media, I so eager to learn and re-create this masterpiece.
Is very time consuming and need to details to perfection, but the outcome is so satisfying.
Recipe:
Apple center: apple juice 140g, lemon juice 25g, sugar 10g, NH pectin 2g, fruit wine 5g, dill 2g, 1 big granny smith
White chocolate ganache: gelatin powder 6g, water 30g, whipping cream 140g, white chocolate 80g, apple juice 30g, fruit wine 5g
Apple coating: white chocolate 250g, cacao butter 250g, green coloring ½ tsp, vanilla extract ½ tsp
Apple glaze: gelatin powder 15g, water 195g, sugar 225g, corn syrup 225g, 2 drops of green coloring, yellow color ⅞ tsp, condensed milk 130g, white chocolate 240g, edible silver sheets.

    If not the fan of dill, you can opt this out. Dill at the same time add in the more visual cosmetic aspect and fragrance.

    If no cocoa butter and corn syrup i can coat it one time only without glucose or corn syrup then cacao

    Cocoa allowed the tempered chocolate at a higher temperature. Without it , it might not temper well. the corn syrup just make it shiner. I think you can go without it, but the outlook may not look nice .
