Halva is a traditional food among Greek Orthodox who have food restrictions over the lent
In Greece, It is also called grocer's halva (ο χαλβας του μπακαλη)
In Turkey it is one of the oldest sweets and had a special place in the cuisine of the sultans.
It came to Greece in 1922, by Greek refugees from Asia Minor who knew the art of making it.

    @@TonyKavalierosUS tysm good tip, I didn't know to add water to the boiling sugar Q: in the old days did they always use sugar as the sweatener? And liguid vanilla?

    @@genkishan the original recipe has origine from the Byzantine, sugar in Greece came only after 1900, they were using honey to make halva but I suppose it got too expensive. Vanilla and spices were always available in Byzantine.

    So in Greece is made with italian meringue O_o I saw other recipes, in which they're using only a sugar syrup, without the egg white

    In this video he is using only sugar syrup that it is beaten using heat to look like a meringue, no eggs are used in the recipe, only sugar and tahini.
