Greek Chicken Avgolemono Soup: Lemony Chicken & Orzo Soup
Κοτόσουπα αυγολέμονο
Chicken Stock Video: • Homemade Chicken Stock
Serves 6-8:
14 cups homemade chicken stock
About 4 cups (or less) shredded cooked chicken
8 egg yolks
½ - ¾ cup fresh lemon juice
3 tablespoons corn starch
3 tablespoons olive oil
¾ cup uncooked orzo pasta
1 teaspoon salt, or to taste
½ teaspoon dried dill
Bring chicken stock and shredded chicken to a boil.
Add the orzo and 1 teaspoon of salt and boil for about 6 minutes. The orzo will be par cooked.
Prepare the egg lemon mixture by combining the egg yolks, corn starch, lemon juice, and olive oil in a boil. Whisk them together until smooth and the cornstarch dissolves.
Once the stock boils, add one cup of the hot liquid into the egg-lemon mixture to temper it. This will prevent the eggs from scrambling. Add 1-2 more cups of hot stock while whisking to incorporate.
Add the tempered egg lemon mixture back into the pot and cook over medium heat about 4 minutes until the soup thickens. Continue to mix it.
Add the dried dill and stir.
Serve immediately.
Enjoy!

I just made this recipe today I’m Greek too and I love ❤️ this soup delicious 😋 and warming!! I usually buy it from a local cafe near by my house, but now that I know how to make it thanks to you I will be making it more often!!
I made this today and it is fantastic! Thank you!
Best orzo recipe that I could find on KZread!!!
This looks amazing.....thank you!
This is amazing -- I had this soup from a restaurant purely by accident and had no idea how it was made. I hate egg drop soup so if I'd known it was made with eggs before I tasted it I would have missed out on an amazing soup! I'm definitely going to try this recipe! :-)
This is our favourite pick me up soup. Amazing.
I've prepared this soup today and it's delicious and easy to make.
Just what I needed for today; my son has the flu! Your vlogs never fail to disappoint! I’m looking for your cookbook, next! Super delicious food and simple, complete instructions! Can’t wait for the next one‼️👍🏽😇

Yep, I made a big katserola, turned out perfect although a bit too lemony. Still, happy to have made it, brought back so many memories when mum used to make it.

This is my favorite dish my mother-in-law makes! I fell in love with this soup after I fell ill while visiting my husbands family in Amaliada, it seriously cures! Thank you so much for sharing it, I look forward to surprising my husband with this! Polla filia!!
Delicious! I have always loved this soup. So rewarding to make it at home from scratch. Thank you!!! A new staple :)
Yummy this so well put together ❤️ here amazing 👏
Yummy! My favorite 🤩
I live on soup (literally because I have trouble breaking down food in my stomach) this is going to be a nice change from my home made chicken soup! I ALWAYS have home made chicken stock in my fridge because I drink a couple cups of it everyday. I love adding lemon juice to my broth and soup at the end for freshness!
Yum! Making this for lunch today!
0:30. The "soup for the immune system". LEGIT. I didn't know this soup. I can understand if some people put cut carrots. The micro nutrients! GOD BLESS

So funny you referred this soup to the"Penicillin" of Greek world. My mother , when I was a child , made this too when I was sick . I now make it too, when I'm not feeling .. comfort food! Thank you .. your recipe is delicious . Love you used orzo !
Love Dimitra's presentation. Wonderful, like a friend teaching me to cook!

I'm cooking up some chicken stock right now. I'm excited to make this soup. This is my favorite soup! I've only had it at a Greek restaurant in my hometown. I can't find it at any restaurants where I live now.
Fabulous Soup! I did it twice last week. It is going to be a regular dish for me. By the way I loved the taste after reheating. I didn`t really mind that the orzo was a bit mushy. I didn`t know the taste of chicken and lemon and Dill and Egg/cornstarch ... great!
Thanks
nice , I used arborio rice which is creamy instead of orzo , cut down on the eggs, an no cornstarch turned out pretty good
delicious
yummy!
Oooo this looks yummy :) I wish I had Greek friends to make me awesome food lol
Omg I made this and its so good mmmmm
super tasty
Looks Great. I like how you use just the yolks. You could get pepper in and get the heat by just using whole peppercorns in the initial stage when you are making the stock and then you can remove them.
i want to taste that soup..mmm

I'm going to try this recipe tonight... I sure hope it turns out well. I love this soup and I have tried it in many restaurants but there was one restaurant that made it better than everyone else. I sure hope it's the same recipe you're doing...it's amazing. Thanks for this recipe.

You're so sweet! Thank you and I hope you feel better soon!
Good with chicken even better with lamb neck chops although you need to coo[refridgerate]l the stock to remove the fat. My mothers recipe is different. We use only 2 whole eggs and no corn flour and the meat is served seperately.I also use any small pasta as well as rice.When mixing the egg and lemon I use an eggbeater,when it froths I add the stock very slowly at first and after the first couple of ladles you can go faster.When adding the egg,lemon,stock back to the pot you need to make a smooching sound with your lips otherwise your soup will not turn out good. Once all ingredients are combined turn the stove off and let it rest for 5 minutes before serving. I also like lots of lemon,some people don't,so I keep some lemon aside to add to taste seperately. Fresh lemon is best but I have used the stuff out of the plastic bottle when the lemons were expensive and it was still good. Keep up the good work
Thank you. Can this soup be re-heated later or does it have to be eaten right away?
@DimitrasDishes
6 жыл бұрын
It reheats well up to the second day. The only problem you may run into is that the pasta may overcook... Enjoy
I like separating the egg whites and add the lemon juice,and then the yolks. I love to eat this soup with kefalagera cheese,and crushed red pepper 😋

@@DimitrasDishes happy New year to you😄. Bougatza homemade Is my next try. As well as revani.
Just made this, and it was awesome, thank you! I've already made some of your other Greek recipes! I have noticed that some Greeks when making this soup, separate the egg whites from the yolks, then beat the whites into peaks before beating in the yolks with the whites. Have you or any of your Greek relatives done that, and do you think that would make the soup even creamier?
@DimitrasDishes
7 жыл бұрын
I've never done that. I'm pretty satisfied with the creaminess of this soup. Give it a try. I never needed that extra step, I just used the leftover egg whites in an omelet the next day :)

Thanks for this Dimitra. Loved how simple it is actually was to make! However, how can I prevent the orzo from going mushy when I reheat the next day? :'(
@DimitrasDishes
7 жыл бұрын
That's my problem too. It does tend to get mushy the next day. Sometimes I just doctor it up by adding a bit more chicken stock and some fresh orzo. Just a little bit.
@Michele-W.
5 жыл бұрын
Couldn’t one pass the soup through a sieve the next day? Then ad fresh orzo and put the peaces of chicken back in the soup and boil it for a few minutes until the orzo is ready.
Can you make restaurant style pita (I think they're made with Greek yogurt) please?
My yiayia and relatives use all the egg so whites and yolk. I have seen some whisk the egg whites and then mix in the yolks.
Never try this kind of soup but I am worry about egg in a soup .... What does it taste like ? I love orzo 😋Every dish I made from you were all delicious 😋
Where did you buy your pot?
Help... if I use rice instead of orzo, how long do I cook the rice ? Any particular kind of rice I should use ?
@DimitrasDishes
6 жыл бұрын
It depends on the rice. Basmati rice takes about 15-20 minutes to cook. Just follow the package directions. I prefer short grain rice in this soup like a risotto rice.
I've made this both with and without corn starch and with or without the egg whites. I can't seem to tell the difference between using just the yolks or the whole egg. What have you found in your experience?
@DimitrasDishes

I like the little bit of added creaminess that the cornstarch adds. I've never used egg whites.

Have you ever tried freezing this? It seems like it would be one of those wonderful things you'd love to have in the freezer for those times when you feel like you're starting to catch a cold or when the weather turns cold. I heard you mention "the restaurant." I'm just south of Houston in Galveston County. Where can I go to get some of this scrumptious food?
@DimitrasDishes
6 жыл бұрын
I don't think this freezes well.. Never tried it, but with the egg and pasta, I wouldn't freeze it.. You could keep lots of chicken stock in the freezer and even boil and shred the chicken, and freeze it. Then it comes together rather quickly... Our restaurant is in Spring: Euro Bakery & Cafe :)
@Squee_Dow

Shucks. I was hoping you'd say Clear Lake. That's much closer to Galveston County, and I don't go into Houston proper but once every 4 or 5 years -- longer if I can manage it. ;)
Could you make pastichio w/o tomato sauce. My grandmother made it without tomato sauce. She used to make the lemon cream soup with tiny meat balls and orzones.
@DimitrasDishes
4 жыл бұрын
Sure! You could just follow the pastitsio recipe and just leave out the sauce or use half of the amount. Cook the meat sauce in some beef or chicken broth instead of the tomatoes. Hope this helps! I also have a Greek lemony meatball soup recipe. Here it is :kzread.info/dash/bejne/oIaXj61_dtrQdaw.html
Recipe reads add dill at the end. Your video shows you adding to egg and lemon. When is best time to add dill? Thank you.
@DimitrasDishes
4 жыл бұрын
At the end as a garnish works well but, you can also add the dill to the egg lemon sauce.
Other recipes don't mention removing the egg white. Maybe this is why I can never get the soup to thicken properly? Also, is it okay to make rice separately (can't eat orzo due to gluten). Lastly, is there a more creamy version that is really yellow? I used to go to a diner and have been trying to replicate that recipe.
I love it, can’t wait to give it a try Do you have a page on Facebook or Instagram?

Hi, can you use only whites instead of yokes? 8:22
you should always add a little bit of tomato paste for color. much more appealing looking that way
The egg yolk won't smell eggy?
Interesting about what you say about the health properties. Jews also sometimes call chicken soup Jewish penicillin.

Please don't use corn starch or any flour. Just a quick blitz with the bar mix or potato masher. And no dill. As a Romanian /Australian i love dill but not in the Avgo-lemono.

*My grandmother was born and raised in Greece as was my father. This is NOTHING like how my grandmother made Avgolemono soup, not even close. Her methodology is all wrong. Do not add cornstarch and don't temper your eggs by dumping ladles full of HOT soup into 8 eggs (too many eggs). I have a feeling this cook is NOT Greek. The fact at the end of the video she mispronounces "PITA" tells me she's not Greek. Greeks do not pronounce their bread "pita", it's pronounced "PEEE-ta.*
