@@guga hey guga a new subscriber i can already tell you are going to be my favourite youtuber
I've been a vegetarian for more than 16 years now (started when I was 12, i'm now 28, I also don't eat eggs sadly because i'm allergic to them, and try to avoid dairy due to being lactose-intolerant). Now, weirdly enough, I actually love Guga's channel because he's very informative and he actually cares about the product he's working with, and is always respectful towards every ingredient. He also helpt me allot with knowing how to actually cook meat and other stuff for my fiancé correctly. In a couple of years we are starting a family (we do already have 🐈🐈🐈 together) and we decided that they will eat meat until they can decide for themselves if they want to be a vegetarian/vegan etc. So thank you Guga, from the bottom of this vegetarian's heart. I truely enjoy your content.

That clip from barstoolsports is terrifying on every level.The steep fall, the grill being on, the propane tank coming loose. It's definitely terrifying but from the looks of it she didn't seem hurt, and it looks like the grill missed her leg. Something that to me is even scarier is that you can see the thing she was walking and running on wobbling. Best guess is that it's a pool cover, which would make pushing the grill into a position where you can turn it off even more awkward, difficult, and precarious

@5:53 I loved the expressions on *Guga's* face so much, that I rewound and rewatched a few times. 🤣😂😅
I don’t get everyone’s obsession with the reverse sear. Searing it first you see it gets the crust you want, and then you can throw it in the oven, or off indirect heat to let it finish cooking. Reverse sear seems way more prone to over cooking trying to get a perfect crust.
This was so enjoyable to watch your reaction!!!
Very informative Guga! Keep going with this reaction videos!
Funny and informative hahahaha keep doing this kind of videos pls. I hope it reflects on the views as well!
Great video Guga i want more of this ones
The Gordan Ramsey poke thing actually worked pretty good for me. I go more by timing now, but the poke method definitely did it's job when i started out.
This was hilarious and actually really informative!!!
I had to eat overcooked meat until learning about the pineapple method. Because we rarely have tender cuts, so we had to break the collagens with heat. We used things like pressure cooker for that. It works well for some recipes, of course, but a steak? No way with those cuts. Pineapple made it possible to cook hard cuts as steak. And for the crust, I'm working on it. Bread crumbs with deep frying worked well, but it got soft and peeled easily with too much water/juice from the steak. I'm planning on only using the seasoned flour the next time. Apparently, flour does some drying. Or maybe letting the steak rest after washing the pineapples. IDK.
@RambofromWarzone

Wish I knew what you were talking about lmao
@Santibag
2 жыл бұрын
@@RambofromWarzone think about this: some people give me legs of a cow, and you know, legs are hard because they work a lot. They are carrying a heavy animal all its life. To make such meats tender, you need to do something. One solution is to cook at very high temperatures, like 100+ degrees C(212+ F). When you do that, the intramuscular ties, which are made of something called "collagens" break and turn into gelatin, which is a soft material as we all know. This is a way to make such cuts more tender. Of course, long muscle fibers may still be tough, so cutting the meat into small cubes will shorten the fibers and may reduce the chewing required. You can also just fry the small cubes, which will make tons of crusty cubes with all collagens are broken. This is a very common way of cooking tough meats. But you know, these solutions all require overcooking the meat. Fried small cubes may still be considered another beauty, since fried meat is actually not the same as an overcooked meat. But you cannot eat a steak that is less than fully cooked with any of these techniques. And tenderizing comes as a solution. Find and use a good tenderizer, and all of those tough meats are now fit for being less cooked steaks. One of the best working tenderizers we know is an enzyme from pineapple. Enzymes are contract killers of specific substances, and the enzyme from pineapple targets proteins. This means that if you marinade the steak in pineapple enzymes at room temperature or something(enzymes have working temperature and moisture requirements) the enzyme will technically digest some of the steak and it will reduce the integrity of the steak. According to Guga's experiment, 24 hour marinade can almost destroy the steak and it becomes unpleasant. 30-60 minutes of marinading tenderizes a tough cut so well that you can feel the difference even before cooking it. Of course, you need to wash the steak after marinading, because we're done with the enzymes business there. This introduces so much water that it's probably the reason the steak losses its ability to have a crust. Along with this, any crust that forms cannot stick to the steak and sticks to the pan. This is why it's another business to find a way to make crusts for pineapple marinaded steaks. I hope this could give some insight 😊 You can ask if you have questions.

I agree with u Guga, I wanna try blue rare steak once in my life from a very trusted source. Hey Guga, thanks for your great videos. After watching your videos, I have three requests for future videos: - Please try some other cattle breeds than wagyu and American beef. - How do you clean all your pans and other cooking ustensils so they continue to be so shiny ? - Please cook a foie gras in a terrine using sous vide. And yes I'll repeat those requests often. ;)
We used an air fryer to do a reverse sear the other day. 200 degrees for 15 min while it's on a rack, flipped it once about halfway through. Then seared with butter and a little bit of basting. Actually worked pretty well. Don't know if it had a huge advantage over doing it in the oven. Maybe Guga can do an Steak in the Air Fryer Video.

It was _all hands on deck_ when she was going to ask for anything. Chiefs from the Police, the Fire Department, the Roads Maintenance, Animal Control, Sewers, *_everybody_* showed up. Unfortunately, she _boiled_ steak you could practically read through in some butter in a cheap 12" aluminum pan that *_never_* got hot enough to sear [expletive deleted]. That's how my grandma was 😅 her deserts were absolutely divine, I've never been able recreate some of her recipes even though I had her write them down. Unfortunately she'd had a fear of foodborne illness driven into her, so she cooked all meat as if she had a grudge against them. Sausage, bacon, hamburgers, steak, turkey, didn't matter, it was always bone dry by the time she was done with it. Never got sick, though!
