Goan Beef Cutlets | Beef Patties | Beef Burger Patties | Ground Beef recipes

Goan Beef Cutlets - Quick and easy recipe. Serve as appetisers, main or use in a burger. These are so versatile.
Goan Beef Cutlets
500g ground beef (beef mince)
1 large or 2 medium onions, finely chopped
2 birdseye chillies, finely chopped (optional)
3-4 cloves of garlic, finely chopped
1/2″ ginger, finely chopped
1-2 tbsp fresh coriander leaves, finely chopped
1 egg
1/4 tsp black pepper powder
1/4-1/3 tsp turmeric powder
1/2 tsp red chilly powder
2 tsp Worcestershire Sauce
Salt, to taste
2 slices of bread
Bread crumbs, to coat the cutlets
Olive oil, for frying (You can use whatever cooking oil you have on hand)

    Since bread and a cutlet were not common ingredients at home , finely grated boiled potato was the usual binder. We once made 98 cultlets for a party. It was a hit. But the meat was cooked and minced. We used a table spoon to shape the cutlet to make it all uniform . This is such a Portuguese burger who came looking for spices !

    I love your ingredients in your mince . as I do that too, but minus the chopped garlic, but i add chopped ginger like you've adding some garam masala powder. I use deep oil to fry my cutlets , to a golden brown, and drain off excess oil on kitchen paper, but the come out bone dry from the wok, its a precaution I take,not to let them be oily. in shallow frying with raw meat there's a good chance the meat can be raw inside, so is why I deep fry. I also cook and season my mince using the same ingredients as you have. they're a hit with my friends yesterday I made koftas using the raw mince, but did a deep frying, I love your recipe and hope to see more of them. thank you for sharing it with us.

    Thanks so much for this. My beloved late nan Olga who was Goan always made these for me. I am now very interested in cooking Goan food myself. You make your cutlets just like my nan did and now I can also do it the same. My nan also made me potato chops with mince inside. I might try that next. Do you have a video on those?     Thank you for your reply. I now live in Austria. One thing I really miss is Goa sausages. My absolute favourite, but I cannot get them here at all. I know you have to soak them for days, but I have no idea how to cook them. That and Sorpatel is a huge part of our culture. My nan knew so many nice people in the Goan community in north London who she sometimes got the dishes from, but they have all passed away. I make a good sorpatel, but I feel I will never eat Goa sausages again. :( I will spend lots of time watching your videos. Luckily I have all my nan's authentic spices with me and I even make my own garam masala.

    Hi mam i tried this beef cutlets. They turned yummy. I only added one boiled potato also. The cutlet didn't break plus the raw beef also got cooked. I made thin ones just like you mentioned. Thanks

    This is how we always make our cutlets even in Bombay and it always cooks through. The trick is to not make them too thick and cook them on a medium heat. If cooked on high heat, they will quickly brown on the outside and stay raw on the inside.

    All the details are mentioned through the video. 😊 Thickness is a little hard to measure, but please do check the video for a guide. Don't make the cutlets too thick and cook it on a medium heat. If the heat is too high, the outside will brown but it may not cook through.

    Excellent. I reduced the salt instead added one cube of Magi beef cube. Lemon juice sprinkle.and 1/4 teaspoon of garam masala.

    Hi Noel, you can use the same recipe for chicken mince too. But I would leave out the worcestershire sauce for the chicken cutlets.

    In india the beef is always tough. Even in cooker it takes atlesst 35 - 40 min to cook.

    Best idea put the coriander chillies and onion in the chopper machine and then add the soaked bread after squeezing it well. within seconds your mixture is ready, mix all the rest of the ingredients well, no fussy cutting etc.

    Very nice cutlets...would bake them for 15mins after frying, to ensure that the meat has gotten cooked , as raw meat was used.

    I used to cook beef cutlets all the time but about 5 years back, I experimented using pork mince. Pork mince is a healthier option to beef and actually tastes better too! I've been making my cutlets with pork mince ever since and it's wonderful!

    Absolutely agree Darren, pork cutlets turn out really well. So do meatballs and you can use them in sandwiches or serve them with an Asian style dipping sauce. They are super delicious.

    I make my own mince, cannot trust how many cows are used to make the store bought mince. Good recipe, the fire should be on the low setting or else the cutlets don’t cook inside, just a tip... have been making these for last 30 yrs😉 Dev barein karu 🙏🏽

    Hi Sybil, the mince is cooked when you fry the cutlets. Dont fry them on a very high heat or they will just brown on the outside and not cook inside. I hope this helps.

    No need to boil the beef first. Just make sure you dont make the cutlets too thick and cook it on a medium heat so that it cooks through. If the heat is too high the outside will get brown fast, but it may not cook through. Hope this helps.

    @@ravindraisaacs6280 It is not a BBQ sauce, it is used while cooking. You get 2 types, one with anchovies (small variety of fish) and you also get it without the anchovies (the veg. version). You'll have to take a look at the ingredient list for this. I hope this helps. Let me know if you need any more information. :)

    How do you think normal beef patties are cooked....by frying them!

    The beef cooks with pan frying too. Just make sure, you're not cooking them on high heat. If cooked on high heat, they will brown quickly on the outside and may remain uncooked in the middle.

    The beef cooks completely when fried like this. Just make sure you dont fry on very high heat.

    I wouldn't recommend it, fresh is always better. That being said, the cooked cutlets can be refrigerated for a day or two and re-heat really well.

    Hi Gwyneth, you can leave the sauce out if you dont have it. Try adding a little vinegar and a slight pinch of sugar instead.

    This is 100% beef. I'm based in Australia and fortunately, we don't have any restrictions like those in India and other parts of the world. However, if you only have access to buffalo meat, this recipe will still work for you. :)
