Glass Noodles with salmon and vegetables | Funchosa salad

Cellophane noodles, or fensi, sometimes called glass noodles with salmon and vegetables is a fast and mouthwatering dish for lunch or dinner.
Ingredients
100 g | 3,5 oz Funchoza (glass noodles)
100 g | 3,5 oz Parmesan cheese
200 g | 6 oz salmon fillet
60 g |2 oz olive oil
150 g | 5 oz soy sauce
2 tablespoones sesame seeds
1 red bell pepper
2 cucumbers
3 clove of garlic
1 teaspoon honey
1 teaspoon Dijon mustard
1 teaspoon red vine vinegar
1/2 teaspoon sweet paprika
1 teaspoon sugar
salt to taste
Guidelines
Bake a salmon fillet 25 minutes at temperature 180C | 356F
For sauce
Mix soy sauce, honey, garlic, sweet paprica, sweet chilli pepper and Dijon mustard.
Cook vegetables
Chop cucumbers and red bell pepper into really thin strips.
Add olive oil to the pan. Stir-fry the vegetables for 2 minutes, add sugar, stir-fry 3 munutes more. It should be crunchy.
Cook noodles
Pour boiling water over the noodles, stir, wait 3 minutes, drain it to a colander.
Noodles may vary, so follow the cooking instructions on the noodle package.
Mix noodles with stir-fryed vegatables and sauce.
