    I've lost count of how many times I've baked this wonderful cake and every single time people were delighted and mesmerized. Down here in the tropics, I live in Brazil, the concept of a carrot cake is a very different one and everyone absolutely loves this English version. In the Brazilian recipe the carrots are mixed in the blender, so what you get is only the memory and the colour of it. The icing is always a chocolate ganache that is a tad too sweet even if you have a sweet tooth. I have to say, this carrot, ginger and walnut cake is just heavenly!!

    I have never made it but the intense fresh ginger juice must do the trick. And the crystallized ginger. Must be heaven!

    Nigella had me captivated the very first time I saw one of her shows. Her beauty, the sensual tone to her hypnotic voice just lock you in when she utters her culinary terminology and strategically pauses, as her eyes stare into your being with a look that makes her the boss of effortless cooking. She is the cats meow in the CHEFDOM of the Culinary Arts!!!

    Love seeing Nigella happy again doing what she loves. Thank God she divorced her second husband who was abusive and controlling to her. He wanted to dim her light and I am grateful for the photographer who took the pictures documenting the abuse that occurred publicly. I believe it was the final push she needed to leave Charles Saatchi. God bless her.

    We make ginger tea add a small PC in your tea while its brewing and strain it off it's the best remedy for cold during winters.

    love love love nigella, but i really wish this video didn't have the music in the background. it's so loud i can barely hear what she's saying, plus the best bit of cooking programmes is hearing the sounds of cooking!

    Thank you for the uploads!I have tried over 10 recipes from Nigella!the parmesan shortbreads to waffles and chocolate cakes.Husb was my food tester!He love all the food!PS im not a kitchen goddess like Nigella but her recipes made me feel like one! Most of her recipes are easy to find ingredients,effortless,messy but you feel like you dont have to try hard to impress other people let alone yourself!

    I tried this recepie and my cake turned out to be really great.😊 skipped adding crystallized ginger and all spice as I didn't have it. Rather I added ginger juice and cinnamon. This also worked very well 😎😁😃😂

    Be careful when adding icing saugr when mixing in and doing that bacuse it fly all over the counter and the floor we do not want that

    200 grams grated carrots 75 grams cristalized ginger 100 gr walnut halves 200 plain flour 1/2 teaspoon bicarbonate 1 teaspoon baking powder 1/4 teaspoon salt 2 teaspoon ground ginger 175 soft brown sugar 2 eggs 200 ml vegetable oil Mix liquids Add dry ingredients to liquids Grated carrots walnuts and ginger 20 cm springform tin oven 170 degrees for 45 min. Frosting: 100 soft unsalted butter 100 icing sugar beat 1 teaspoon cornflour 100 cream cheese cold from the fridge ginger juice from grated ginger. 1 tablespoon

    I squeeze ginger all the time too. when im waiting for a tube on the London underground, I always make sure I have ginger with me to squeeze juice from just in case I need it in an emergency.

    The cake the ginger cake knock out that sherry boozy trifle wow I've made that with Harvey's bristol cream sherry wow I had one portion and I feĺl asleep after wards that bristol cream is very strong did u put bristol cream in that trifle 330ml in wow please get back cooking on the tv I love u cooking

    I don't understand the corn starch in the icing. Doesn't corn starch need to be activated by heat to thicken something? I tried it anyway just because it is Nigella saying it, but this time, I really disagree with her as I can taste the raw corn starch in the icing and that's not very pleasant. Otherwise all good.

    What kind of vegetable oil are we talking about. In my country you can't buy an oil that is labeled as vegetable oil. Can olive oil or sunflower seed oil work?. What suggestions can u give for best results? What are you guys using? 😁

    I use sunflower oil or hazelnut oil. Olive oil has noticeable flavor that might not be suited for sweet stuff

    I always loved watchibg Nigella's cooking shows. But I always noticed how clumsy she looked whilst making her dishes. She never cooked or baked things as refined as she looks. If that makes sense.

    We must find a healthier substitute for vegetable oil. I bet olive oil would work. Also, I’m afraid there’s so much ginger that it would be overwhelming.... ginger powder, crystallized ginger, and then juice of ginger in icing!? Wow! I love ginger, but... ;-) looks delicious.

    I've made this cake twice and it's not overwhelming at all. The cake itself is only lightly spiced and the icing mostly tastes just like sweet plain cream cheese icing. The crystallised ginger is the only explosion of spicyness.
