Ginger Shrimp

I used to make my Ginger Shrimp recipe when the kids were little. A real crowd-pleaser! Well, it's high time to make it again. Here's how...
Ingredients:
1 lb frozen cooked shrimp, tails off and thawed
1 TBSP toasted or regular sesame oil
1/2 cup fruit juice (orange, apple, or pineapple)
1 TBSP honey
2 TBSP soy sauce
1 TBSP fresh grated ginger root (or 1 1/2 tsp powdered/dry ginger)*
2 cloves garlic, minced or 1 TBSP dried garlic
3 medium bell peppers (red, green and yellow), cut into cubes
1 cup canned pineapple chunks, drained
Sesame seeds for garnish.
Prepared rice to serve.
Method:
In a large pan, heat oil to medium
Add peppers. Cook for 5 minutes.
Add soy mixture and pineapple chunks.
Increase heat to high and bring to a boil.
After it reached boiling, reduce heat back to medium and add shrimp.
Cook and stir until shrimp is heated through.
Serve over rice.
*In the video, I said 1/2 a tsp of powdered ginger. However, 1 1/2 tsp is the correct measurement.

    Looks/sounds great. Question: why not put the shrimp in the "sauce" raw? I'm always afraid of overcooking shrimp and creating little rubber crescents.

    You absolutely can. I just happened to have frozen cooked shrimp in the freezer. I thawed it, brought it to room temp, tossed it in and it was ready in 5 minutes without getting rubbery
