Gianniotiko: Baklava & kataifi in one delicious dessert!

Ingredients
1 pound (#4) phyllo pastry, thawed and at room temperature
1 pound (454g) unsalted butter, melted
For the Syrup:
3 cups (620g) granulated sugar
3 cups water
2-3 tablespoons lemon juice
1 cinnamon stick
2 teaspoons pur vanilla extract
1 and 1/2 cups (570g) honey
For the Filling:
1 pound kataifi pastry, thawed and at room temperature
1 cup (170g) walnuts, ground
1 cup (120g) almonds, ground
2 heaping teaspoons ground cinnamon
1/2 teaspoon ground cloves
Instructions
Preheat the oven to 350 °F, 180 °C.
Make the syrup: Combine the sugar, lemon juice, water, and cinnamon stick in a saucepan. Mix together and bring to a boil. As soon as the sugar has dissolved remove the pan from the heat and stir in the honey and vanilla extract. Set aside to cool completely.
Assemble the pastry:
Remove the kataifi pastry from its packaging and untagle it. Set it aside and cover it with a damp kitchen towel.
Combine the nuts with the cinnamon and clove powder. Mix together and set aside.
Remove the phyllo fromits packaging and divide it into 2 stacks.
In a 9 by 13-inch baking pan, layer half of the phyllo to line the bottom of the pan. Drizzle butter between each layer.
Place half of the kataifi pastry over the phyllo and drizzle with some butter.
Spread the nut mixture on top.
Add the remaining kataifi on top of the nut mixture and drizzle it with lots of melted butter.
Fold any phyllo that is hanging outside of the baking pan over the kataifi. Layer the remaining phyllo layers on top and drizzle melted butter in between each layer.
Score the top into 24 pieces. See video.
Pour the remaining butter all over the top and sides of the pastry.
Bake on the center rack until golden. About 1 hour and 15-20 minutes.
As soon asthe pastry comes out of the oven, carefully slice through each of the pieces and pour all of the syrup on top. Allow the pastry time to absorb all of the syrup. About 2 hours.
Serve with coffee. Kali orexi!
Notes
Store leftovers in an airtight container in the refrigerator for up to a week.

I grew up in Corfu and went to Ioannina at least once a month to see relatives and never heard of this but loving the idea of both in one.

To be frank, this is a turkish recipe and Ioannina still carries this tradition for obvious reasons I don’t want to debate.

@@illyriumus2938 Ofc you don't want to debate, because you can't. But since your comments purpose is only to create drama i will explain the differences between Turkish and Greek Baklava and Kataifi. The Turkish version uses Rose water syrup and cardamom while the Greek one uses honey, cinammon and cloves. The Turkish one uses pistachio and the Greek one uses walnuts. The Turkish one is bite sized and tiny and the Greek one is the size of a cake slice and served on a plate that you cut with a fork and knife. It's like saying American pizza is the same as Italian because it has a round pizza base and contains cheese. The baklava original recipe is Assyrian and was a oven baked bread with nuts and dried fruits in it that Greek and Arab traders took back home with them and made it using their take on it and the preffered ingredients of their region. It isn't a Turkish or Greek recipe it's a little older than that. As for Kataifi, besides using the same shredded dough there is nothing similar between Greek and Turkish recipies because the Greeks certainlty don't use clotted and brine cheese anywhere in the recipe.

After all this speech, you explained nothing. Particularly, why Of all regions of Greece, this is a tradition of Ioannina. Because of people like you, I also said that i do not want to debate it! Nationalism makes people blind and cannot even respect the origin of a recipe! No American I know says that pizza is not italian. Pizza is 100% of Italian origin and adapted to a different region. The same as Bakllava that has its unique features depending of country: Israeli, Lebanon, Azerbaijan, turky,Cyprus, Greece, Serbia, Macedonia, Bosnia, Albania, Georgia, Armenia. Tried baklava from each of these countries and they all are wonderful, but different. Can you guess what all these countries have in common?? Clue: it is not Greece! Just so that you don’t die ignorant, Azeris are also Turks! Another context: If greeks truly believed that ballava was greek, you would have trade-marketed it as you do with everything Greek or not-greek.i love greece and the Greek people! Never fond of nationalism that brews there everyday, ready to explode at any moment! No one ever saw any good from nationalists. Not accepting the origin of a damn recipe is just the cherry on top.

Hi dear Dimitra I am going to make this delicious recipe, but I am going to modify the recipe because I need to watch my sugar intake. substitute the sugar for Anthony’s confectioner’s Erythritol to made the sirup I ll do 1/4 of the recipe to try. I make the pear puff pastry and is so delicious my family love it thank you. I keep making the banana cake is one of my absolute favorites!!! 🥰❤️💕♥️🌟
