Giannina makes maccheroni pasta with spicy ragù from Calabria! | Pasta Grannies

Giannina Sirimarco lived in the town of San Sosti, Calabria, which has a famous shrine to the Madonna del Pettoruto. She ran a restaurant which was popular with the pilgrims. Here she makes macaroni - with great panache - plus a goat meat ragu, which was her signature dish. Goat can be difficult to find, so lamb or mutton is a good substitute.
I've halved her pasta quantities (this is still enough for around 8 people) but you still keep to one whole egg:
500g semolina flour, 200ml water mixed with one egg
For the ragù: one kilo cubed shoulder and ribs of goat (or lamb or mutton) simmered in water with: 1 kilo fresh tomatoes, one onion, 1 red chilli with its seeds, plenty of basil, salt.
for the pasta sauce: 2 tablespoons olive oil, 400ml tomato passata, 1 garlic clove, 1 onion, large basil sprig, 100ml (or more) of stewing juices.
pecorino to serve.
Giannina passed away just before we uploaded her video and her family wanted to share some of their photos with you which you will find at the end.

Such a beautiful soul!!
The last part made me cry, my grandmother Anna from Bari passed away this year on January at the age of 89. My condolences to the family, addio Giannina❤️
It's comforting to know that no matter where I am, or what I'm doing, somewhere far away there's a little old woman rolling a wooden dowel through fresh pasta
I imagine that her family cherishes this video as an opportunity to be reminded of such a talented woman. Thank you for sharing this lovely film.

Man, this video choked me up. What a wonderful tribute to this extraordinary woman. It's within the nature of this channel that its protagonists may very well not be with us anymore as we watch their videos, and the fact that Giannina passed before her episode was posted is a stark reminder of that. I thought you handled it beautifully and with great respect and I hope her family will find peace in the fact that a worldwide audience was touched by her talent and knowledge.

You're doing such a service. If you hadn't captured video of Giannina making this dish when you did, then this tiny glimpse into her world would never have happened. I believe that every human life is unique and precious. You've preserved a tiny sliver of Giannina's precious and unique life. Thank you.

That was one of the best videos.shown on this channel. Loved every bit. I am very sad to know we have lost such a vibrant person. Thank you for including vintage photographs of her life, and best of all for the song she sang for all of us. Bless those strong hands which had made so many delicious dishes. Even as I write this, it is midnight here in India, and I have turned 75!!
Ms. Vicky, I don't want to upset anyone, but when a sweet lady like Giannina passes away, it makes me sad & almost sick, what a beautiful soul in heaven & condolences/blessings to her family. This is a great recipe, I love the maccheroni thick like that & the goat meat, the passata & olive oil, it's perfection. Well... I didn't expect Pasta Grannies to make my cry.
My dad's family came over in the 60s when he was about 15 from San Piero Patti, west of Messina, Sicily. Nana didn't speak much English, but I got to make make maccheroni with her a couple of times. She used the reeds her sister sent her from Sicily rather than the more modern metal rods most use. It was a treasure of mine that when she passed away in 2010, my dad gave me the reeds she used to make her pasta. I still have them, and have made the maccheroni -- which was all we knew it by on EVERY birthday, Easter, and Christmas -- with both of my kids whenever I can. I think it's time to make some soon. Thank you for sharing your time with Giannina with us. She really reminds me of my Nana, especially laughing as she sits there and rolls out the dough.

What can I say....yes, tears and joy. Thank you for bringing us so close to Giannini and her home. As I watched her rolling the macaroni I wondered if I can find an umbrella spoke or equivalent and try to make some of these. We often made pasta by hand many years ago as a way to preserve eggs for winter.

My grandparents were Arbereshe and I couldn't understand a word of it. Well, there were a few Italian words here and there.
I count myself as a stoic sort of guy but the tribute at the end choked me up, and made me think of my own grandmother, her life, and all her delicious food. What a great video.
Calabria is one of my favorites!! I think of pepperoncino, cured meats, and rich hearty sauces, tutto Bueno

What a colorful life she must have had, like the colorful ingredients she used for this dish. And the lower wooden board supported by two chairs for her comfort while working the dough! Simply genius. And lucky all the people who got to eat her food at her tiny restaurant. All that hard work in her life one could hear it in her tired voice. Saying a little prayer for her soul.

I didn't expect to sit here and surreptitiously try to wipe tears in public while casually looking for spicy ragu recipes. A piece of people's lives are in their recipes. Thanks for sharing.
So sad that she passed away, but i'm quite sure she's in Heaven. She reminds me of my grandma, who passed away 6 years ago, at the age of 95, i recall all her wonderous recipes, best food i ever ate was cooked by her. Grandmas have a way to never leaving our hearts and souls, and we sure never forget their cooking. I've been to Italy often before this whole pandemic thing, i hope to go back again soon and eat all this great pasta again. Rest in peace, Gianninna!
