Check the sensor on the intake manifold on the side you will see it has two screws and let it idle if you plug it out and it switches off it is good but most of the time that causes it to bounce

Cold start sensor , mine done the same

Clean the throttle body. Mine did that too

Problem has to be wiring mine does the same not as severe, replaced the sensor replaced alot of machanical part that might have have been caused the issue but still does

I think its the throttle body sensor

Cold start sensor.

I have a video of my car doing exact same thing, even while driving once I step on my clutch it jumps. Adjust your distributor, Solved my problem. But Adjust by millimeters slightest touch makes a difference.

Timing

My golf was doing the same thing with the revs, got a new map sensor was still doing the same thing then 1 guy suggested that I should unplug the map sensor then its been normal ever since but I did a diagnostics on the car and it said it's a problem with the earth or positive wire I forgot
