This has really been a job and a learning experience for sure!

Its a giant puzzle as you learn the best process and the moves and turns it takes to get an order together. Then there is the cash box and card processing station, which is totally needed. You are doing it right by planning the best use, then when you actually flip the switch, you will change it all.

Hi Crazy Pop! The trailer is looking good! The only thing I would suggest is to find a way to store your single use trays and plates. They will be all over the floor the way you have them stored currently. If you can, keep them in a tote or original box on the floor until you get to where you are going. First bump they are going to fly…haha. I am still looking forward to visiting you from up here in VA when you are up and running. Take care my friend!

Yeah, I agree. The plan right now is to keep them in totes in the truck and while setting up, stock them on the trailer, the the end of the day, back in totes.

I ain’t trying to get in your business but to start out I would keep my menu very simple and a limited number of Items on the menu, this will help you with ease of flow, prep, and inventory, also remember you have to remove some of those items for maintenance and cleaning, the trailer looks good so far.

If you turned those racks over, you would have a nice lip to help keep stuff on it when in motion.

I thought about that, but the problem is there are wire rods welded to the underneath part for stability. If I flip the shelf over, those would be in the way.

Where will your pots and pans store? Great video. Didn’t think it would ever clean up but ya’ll have done an amazing job on it. Best of luck to your new venture. Will there be food truck cooking videos? I sure hope so. Where will you set up to sell the food. Will you travel in state only? Thanks for sharing your dream with us griddle nuts.

A big cook for family and friends is the best thing you can do. I think your setup is going to be a knock out of the park!

Question, I have a food trailer for Mexican and Puerto Rican food and have a refrigerator. How do you keep the refrigerator running overnight? Instead of unplugging and plugging back in daily? I have not started the full business, have inspection coming up next week.

I have a plug at home next to where I park the trailer that I can plug up too and keep everything running without using the generator. It is really nice being able to keep everything running!

Lol, the shelving has been raised to 6 inches and I have an A rating from the South Carolina Dept of Health. Only thing found was 3 bay sink was not caulked to the wall, which is fixed now. How about being helpful in the comments instead of negative and condescending.
