As a Turk: we don't really eat at Nüsret's restaurants, they're too overpriced for locals; and while the food is good, you can get the same or better quality burgers/steak elsewhere. His shops are basically for tourists and foreigners, and that's fine. It's a quality burger, but no extra frills beyond the Instagram bait performed by the servers. Is it worth the price? Not in Turkey, but - as mentioned previously - it isn't priced for Turks. Let people enjoy what they enjoy!

You have to cook burgers through because burgers are made with minced meat, meaning any germs that were on the outside of the meat, is now in every part of it. The only way to get rid of all the germs is to fully cook it... whereas steak is different, the germs are only outside, cook the outside and you can eat it

Steak tartare requires high quality meat, and has an entire list of preperation requirements to ensure that there is no bacteria or anything on it. It can also be marinaded in stuff like lemon juice to kill bacteria. It is not the same. None of these requirements are given to burgers, as burgers are not meant to be medium rare. That means there is a big margin for bacteria, viruses and/or parasites to still be active within the medium rare burger.

Thanks. Looks great! But I wonder was the burger and steak charbroiled (or cooked on charcoal or a wood fire) or just cooked on a flat top grill or iron skillet if you can tell (or ask). I prefer the taste of burgers charbroiled or done on coal etc. and typically do not go to burger joints who just cook them on the flat top. Also, can you tell us in the future what method you think the meat you eat is cooked (if possible). Thanks so much. Love your show! Cheers!
