GELATO Recipes | How to Make (and EAT!) Italian Gelato at Home
#gelato #recipe #italianfood
If you've ever been to an Italian gelateria (especially in the south), you know that the experience is a little bit more than simply grabbing an ice cream cone. They craft all kinds of incredible desserts using gelato! Decadent ice cream sandwiches, "truffles" of stuffed ice cream, and Italian ice cream cakes are just a few examples.
Today, Eva shares how to make gelato at home plus a handful of our favorite gelato-based desserts. I scream, you scream, we all scream for ice cream! Oh, and that reminds us: we've brought on a special guest to explain the technical difference between gelato and ice cream 👨🏻🍳

I totally need you guys to make an entire video about Pistachio. I know it's expensive and it's hard to find, especially considering the one we use, the Pistacchio di Bronte is protected and therefore extra expensive, but it's such an important ingredient, especially in Sicily. From gelato to granita, from pesto to a spread that's better than Nutella, we use it as topping and we use it as the main star of the dish and our Pistacchio verde di Bronte is one of the best pistachio varieties in the world.

If you are ever in the Pasadena, CA area -- there's a gelato shop just north that has incredible pistachio gelato from a real Italian master. It's called Bulgarini Gelato in Altadena.

I bought enough pistachios to make 2 trays of Palestinian-style baklava. It cost a veritable fortune. But they make their baklava with pistachios instead of walnuts, so I bought the more expensive pistachios.
My favorite gelato flavor is definitely pistachio! I’m fortunate enough to have an authentic gelateria run by a sicilian family near me. I could eat their pistachio gelato every day of the week.

@@tiatumin5262 I'm gonna be honest, if you're in USA there's actually a great chance you'll find genuine gelato, compared to us lowly third-world peasants. emmymade's channel showcased TWO boxes with HUGE assortments of sorbetto and gelato flavors made by il laboratorio del gelato. The first box had 25 flavors. Later on they sent the second one with 31 flavors. No sponsorship, just her falling in love with endless flavors. (And dismissing some. To be expected, the selection is all over the place.) She almost died with the Chocolate-Kahlúa gelato. (Kahlúa is a coffee liqueur.) Anyways, they have a website, if you can go perhaps it'd be a good visit. I'd love to go one day but it feels more like a distant dream for me since I don't live anywhere near the damn place. I also would like to know Eva's opinion of their stuff since I can't have any.

I would also eat it far too often.. Luckily the price point for it has a serious braking effect on any headlong rush to pig out. Real, proper Gelato of high quality is. EXPENSSSSIIIIVVVVEEE.

Here in Salt Lake CIty we have a pretty good gelateria, named CAPO, attached to our very own Italian certified Neapolitan Pizza place "Settebello" It's a match made in heaven
Ava, I LOVE how careful, intentional, caring and proud you are about every single step you take in cooking. The six of us were raised by a single working mother who had no time to teach me, the eldest daughter, to cook so I just threw whatever we had in our bare cupboards together to feed us all. Your techniques and attitude are inspirational and nourishing for the soul. Thank you both for posting. Love them all!
I don't have a favorite gelato, I don't have a favorite grandkid, either. They are all wonderful!
When she does the "spoon swirl", you know it's bangin'!
I have such a "owyousay" crush on Eva!!! That accent just melts me. "Aarper" is such a lucky man!
Hubby and I spent our first anniversary in Italy on a super-budget USO (US serviceman's organization) tour. Unfortunately, we were in Rome on a Tuesday when all the 'main attractions' were closed. We were very plucky though and found a nice little 'ice cream shop' (sorry, gelateria?) where we purchased two desserts that looked like American ice cream cones made with local strawberries. Great to be there in May when Roman strawberries were in season! We were being 'cheap' and not eating at the places the tour took all the American tourists and got to make many memories of foods purchased willy-nilly away from the tour group. Loved this video and the many memories it prompted.
Here in Australia we have a Gelateria which beat all the other competitors, to win the Gelato World Tour in Rimini - Italian teams came second and third (Francesco Mastroianni and Alessandro Lancierini) It is the best gelato I've ever eaten, and every time I visit Sydney I have been known to eat as many as 20 scoops of their gelato over the course of a week. My favourite flavour of theirs is their Mandorla Affogato which is the flavour that won them the world title. I am also partial to Lotus Biscoff Gelato which you'll find quite often in gelaterias here, and There is a Gelateria here in Brisbane run by a Chinese man that loved gelato so much he went and studied in Italy to learn how to make it - they often have traditionally made gelato but with Chinese inspired flavours - I love their Taro flavour, their coconut and Pandan Leaf (made with coconut milk) and their Earl Grey Tea.

Huh, interesting! Great info, esp if I ever find myself in Australia! I wonder if they do an ube flavor to go alongside the pandan, or if that would confuse people with the taro. Very cool to hear about a Chinese man drawing inspiration from all over the world and using it in gelato =) there's a small ice cream chain in Southern California (Wanderlust Creamery) that does the same, with rotating monthly flavors. I'd love to taste something like that in gelato form!

@@Senju1k13 I've never seen an ube flavour, although this is the type of place that rotates flavours a lot. Pandan and coconut milk is one they usually have and I always get it when it's there. They also often have flavours like black sesame, durian, there was a salted egg yolk flavour once that my friend raved about but we've never seen it since. They also do plenty of more standard flavours

@jonathont7866

@@rhonda6791 It's called Cow and Moon, it's at 181 Enmore Rd, Enmore. It's reasonable walking distance from the Newtown Train station and it's surrounded by very good dining options if you want to make a night of it. They also have outstanding coffee in case you decide to go early in the day.
On a hot summer day in Firenze nothing hit the spot like lemone. . . Tastes are incredibly vivid memories.
Thank you Eva for making us these rich and beautiful gelato desserts. I have fond memories of Spumone and especially Tartufo which we served at our wedding 34 years ago. Thank you Harper for Mr. Rogers, my heart melted along with your gelato!
Love the two of you. Even more the two of you together. The food my favorite!
That Mr. Rodgers bit ….I’m dead. 🤣
This channel needs more subscribers and views, quality content👌🏼
Lemon 🍋 gelato is the best. Not to be confused with lemon sorbet. That gelato tartufo at the end was insane 🤤. The spumoni that I am used is like Neapolitan ice cream except it is with pistachio, chocolate, and a sweet cherry flavor with candied cherries 🍒; nothing like what Eva made today. But of course it looked delicious.

Yeah, I second what we in America have come to know as "Spumoni" Ice cream. Is it completely different from this "Spumone", or are they somehow related? They seem different in form and flavor, but those names are really similar 🤔
Eva's smile is the loviest thing of this video. Thanks for the historical explanations! Blessed you both
Brioche con la granita di mandorla is my absolute favorite
My favorite gelato flavor depends on my mood -- sometimes I want Nutella, sometimes I want lemon, sometimes I want raspberry. (Also, I love that they call vanilla gelato "fior de latte." Flower of milk just sounds so pretty.)
Aww love the Mr. Rogers moment
Seeing you two baking the “brioscia col tuppo” makes my catanese heart beat from joy! :’)
It is such a treat to watch Eva cook. Her hand movements are so gentle & precise, it's mesmerizing, down right hypnotic!
Eva never ceases to amaze me with her repertoire! Gelato now an enviable addition! So skilled in putting these wonderful deserts together, too! Brava! Great video, guys!
Y'all have such a talent for making complex baking / cooking processes appear straightforward and accessible. Love you guys ❤️❤️❤️
Pistachio for sure and oh my goodness I love you for using Mr. Rogers footage!!!
Ciao Eva and Harper! I love all your videos, but this one is work of art! So beautiful scenes, so lovely shapes, so nice caring way Eva creates everything, and just perfect rhythm of lovely music matching her movements! Genius! Thank you both 😊❤️
We want a granita episode and a feat. again with brioscia col tuppo! I still don't know why the ritual of sitting down at a cafè and having a granita served in a fancy glass and a heavenly brioche hasn't yet taken the place of aperitivo in our hot summers

I am very happy to see Chef Alfredo again 😁
I love Eva so much. Her passion and visceral physical reaction to cooking and eating awakens my Italian genes ❤️🔥 I would love to see an episode focused on the Italian soul …. The Holistic Italian!
I had gelato, wish I could go to Italy for authentic gelato, but I have had tiramisu gelato and was a spoonful of heaven 😍😋
Thank youuuuuu! I was searching last week for gelato recipes and was wishing you guys had one posted! 🙌🙏
It is beautiful. The way you two make your treats. 🙏🏼
Thank you for the great recipes. We were lucky growing up in Toronto in the 70's that we had a fantastic corner convenience store where Giacamo made italian gelato. Oh the sweet memories. Chocolate, banana, grape, coffee, lemon. Thank you Eva and Harper❤.
I still remember from years ago visiting a gelato shop in suburban Dallas where I had a violet gelato that was floral without tasting soapy. I also had their rose gelato, but I preferred the violet.
Harper's Italian is excellent.
Do yourself a favour and buy a Bamix from Switzerland. A world of difference to other stick blenders......or any blender, come to that. p.s. my favourite gelato flavour is Castagna.

Pistacchio is my favourite! These desserts are wonderful. The spumone is a dream come true!🥰

My favorite gelato was always nocciola. When I lived in Salerno, Italy back in the 70s, I used to love having the brioche con la Panna! I will now try it with the gelato!
Chef Alfredo! Welcome back!! 😁 My favourite is 🍋!! First choice always! Thank you Eva and Harper!
Bless you Eva! Although I left my native Vienna when I was 5 years old, I still remember certain beloved foods after almost 70 years. When my Mom, daughter and I went back to Austria in 1996, I revisited those favorites. I can and have made most myself, I couldn't find a good hazelnut gelato despite looking and looking and looking. I can't *wait* to try your recipe. Mille Grazie!
Petition to make eva try and make crazy American ice cream flavors as gelato 🤣
È un piacere e una gioia guardarvi ! Siete terapeutici 👍🏼😊😉
Cantalupo!!! Just an amazing flavor.

My favorite is gelato all'amarena o spagnola with delicious cherry swirls and cherry fruits. Love it.
They all look soooo Yummy!!! Especially this time of year in Florida ❤️
Fior di latte is probably the best I’ve ever had or made. Super simple and versatile. And oh man, affogato is soooo good.
The espresso Gelato I will definitely try. Thank you.
Brilliant videos ❤️🙏🏼
Stracciatella and pistachio are favorites!
Hi Eva and Harper! I am from Brooklyn, NY and around here, Spomone is something a little different. My guess is it has became Americanized, and they took out the cake. tt is spelled Spumoni, and it is basically 3 types of ice cream (vanilla, chocolate, and pistachio) in one- kind of like how Breyer's sells Neapolitan ice cream. I don't think you can find this in grocery stores but it is still served in some Italian pizzerias and ice cream shops. It is usually served in a cup or on a cone, and it is not so easy to find these days. There is a famous pizzeria in Brooklyn that is known for it's pizza and spumoni called, Spumoni Gardens. It was once (maybe still) mob owned, but you didn't hear that from me. lol You may want to check it out if you ever come back to NY. I haven't been there in a couple of years, but they make good "Sicilian style" pizza, where they put the cheese first, then the sauce. I think the spumoni is better than the pizza, especially that they put pieces of pistachio in the ice cream. I may have to take a ride over there now and get me some! Ciao!

Nasto's in Newark NJ is famous for it. I would drive 15 minutes (more like 30 with traffic) each way to get some for my late ITALIAN dad.
Good coffee and vanilla ice cream, one of my favorite thing on earth !
I’m loving the highlights Eva….
I don't remember the name of the gelateria in Sorrento (might have been Napoli) but they had this heavenly concoction called "Profumo di Sorrento" that was a combination of Lemon and Orange with zest and bits of both fruits that was unbelievable. They also had a Pesca that was so good especially if you combined the two. An elderly American couple who were clearly gelatoholics followed us to the gelateria and when the wife came out with an extra large size of the two flavors, her husband asked if he could have a taste and the wife practically snarled "Go get your own!"

I moved to Italy and married my Italian husband. He used to take me to a place in Martina Franca called Latteria del Ringo. They had an amazing rum raisin gelato. The thing is you have to understand in Italy is that if it says it's rum raisin they literally put rum in the gelato. Most desserts have alcohol in them. Many of the gelato shops my husband would take me, when you would buy a container of gelato the gelato was put over top a very thin piece of cake that was soaked in rum. They even have a boxed cakes like Little Debbie's called Fiesta. My husband always got the orange and it outside of it was dipped in dark chocolate. Had a very strong orange flavor but the thing that overpowered it was the alcohol inside the cake. And yes, children consumed these. Since it's not a taboo for children to consume alcohol there I assume that's why they don't have the alcohol problems that we have in the US.
eva, your hair is stunning! you go girl!
La brioche col cappuccio!!!😍
Nom 😋love this resepy . 💙❤️
I went to Venice, and one shop that was away from the tourist section had a gelato with a Nutella swirl!! That was the BEST 'ice cream' I've ever had (The one and only gelato I've ever eaten)!
Difficult to say there's too many good flavours. But among my favourites are Stracciatella, Pistaccio and with Figs and Walnuts. Figs and Walnuts is *chefs kiss*.
My favourite gelato is cioccolato nocciola and cafe gelato thank you for sharing your wonderful recipes with us god bless from Australia 🇦🇺
I remember the day I had basilic gelato in Brescia, I wanted to open a gelato cafe on the spot, so amazing, I tried the violet gelato, to die for and I am not an ice cream person at all, I never think about dessert ever! but that gelato was amazing!
YES!! I remember seeing those tartufo billboards when we drove through Pizzo! We stayed in Tropea May 2019 for several days. Because we are Jehovah’s Witnesses, we wanted to visit our Assembly Hall in Francavilla Angitola. What a lovely drive! But I regret we didn’t stop for the tartufo😥. Another FABULOUS video💗💖💝💓💕💞
Excellent Italian!
Eva...sei trooooppo brava ! 👏🏼👏🏼👏🏼👏🏼👏🏼👏🏼👏🏼👏🏼👌🏼

Mocca/coffee icecream/gelato is my favorite. Lemon, mango, passionfruit and strawberry are good, too
Thank you for your awesome recipes! Here in Malaysia we also have ice cream bread sandwich, the classic flavours would be neopilitan icecream on soft whitebread! It's a childhood favourite, I'll try it with brioche when I next have it, looks super yums.
I live in Hawaii, and we have a local artisian Gelato place, I love their Dutch chocolate and stracciatella flavors. It’s such a guilty pleasure
Nocciola and gianduja are my favorite flavors ❤
The spumone reminds me of zuccotto, a dome-shaped Florentine cake., which I would love to see Eva teach us
Yo Harper and Eva, keep it up!!!
Yay!!!❤️❤️👏
Your brioche looked so beautiful!
Wow!
Oh yes, one of the first deserts my Italian friend made for me. Affogato al Caffe, she put a drop of Amorreto with it pure bliss.
That Tartufo Gelato looked marvelous, and I can indeed easily see it working with all kinds of nuts. But I do adore hazelnuts.
Love gelato! My favourites are limone, licorice root, a very dark chocolate etc etc
I'm lucky that my dad was from Sorrento, so grew up eating amazing gelato every summer that we spent there. But outside the favourites I had there, I used to visit an Italian gelato shop in Brighton on the south coast of the UK, and they used to make the most amazing pear and parmesan ice cream. Doesn't sound like it should work, but it was amazing!
