Gaiwans are a simple but essential tool for brewing quality tea. We spend some time in this video discussing different gaiwans. We go over how to choose a gaiwan and a couple different brewing tricks.

    The gaiwan hold at 8:10 is awesome, everybody should be trying that! When I saw that first I thought it was crazy to squeeze your fingers around 3 separate pieces of porcelain containing boiling water, and that it was surely going to result into one of those porcelain pieces to slip and cause breakage and scalding. But then I just started trying it recently and it turned out to be very good! Very safe and comfortable holding, so much better than the "classical" holding of the gaiwan with two fingers by the edges which most of the time results in some finger overheating.

    It does work pretty well. Depending on the gaiwan size and your hand size it's a better approach.

    On Twitter, you asked for reactions. Mine was pleasant surprise for approaching the subject simply and unpretentiously: it's just a cup with a lid. In my experience, Westerners would have no difficulty understanding this if gaiwan users weren't insufferably arrogant asshats. Gaiwan use is a warning sign that you are dealing with a tea snob, not a tea aficionado. So your video gets points for overcoming a lot of negative expectations that had nothing to do with you.

    Yup. It's just a cup with a lid. I do try to take some of the pretentiousness out of tea. At the simplest it is just leaves in hot water. I think people would do well to embrace the simpler side of tea.

    @@briancook8938 When I go camping, I just take a fine mesh infuser, a thermometer, my sea to summit x-mug, my MSR Pocket Rocket, and a cookpot meant for backpacking. I have a smaller car and try to keep my car camping system simple., one cooler, one bin, and everything else has to fit in the back. Also, I was supposed to take a backpacking trip so I do have a complete cook system. Maybe this year I will finally get to go backpacking.

    Great video sir!! What size you recommend for 1-2 people and which one for something that won’t hurt your hands if the water is hot , thanks a lot

    Something around 100ml would be ideal, but you can always add a little less water into a larger gaiwan. This one is an excellent choice: crimsonlotustea.com/products/white-porcelain-gaiwan-w-crimson-lotus-logo-130ml That one does well with hot water. I use it all the time!

    Greetings, i have a little travel Celedon Gaiwan that has a nice green shine and many smal cracks in it, specificaly What will get better about celadon teaware over time,(or the tea enjoyed from it) and will it be like clay that it should be used with only one tea over and over again "seasoning it" or will it get better over time reguardles of use?

    What I meant was that the color in the cracks deepens with use. I didn't mean to infer that the tea would get better. I apologize for the confusion!

    You can brew black tea in an Yixing gaiwan. I would only wash them with water.

    It's a good question and it depends. Sometimes I like something smaller and other times I want to use something larger. Usually I think I'm using something around 40-50ml.

    Celadon teaware gets dark stains in the cracks, but that is their charm. Porcelain teaware can stain, but is cleaned without too much effort using a number of different dish cleaning options. Sometimes it takes a little elbow grease and a mild abrasive cleaner to make them shine again. Never use cleaning agents of any kind on unglazed clay though!

    @@CrimsonLotusTea By mistake, my yixing pot has already been cleaned with dish washing liquid What do you suggest doing to 'save' it ? Long boiling ?

    ​@@CrimsonLotusTea Thanks for the advice. Honestly it's not that bad, after boiling it and letting puerh overbrew in it for long time, it ends up smelling like a bit like dust (it wasn't used for years), not dishwashing soap... I think it'll be fine overtime

    Kung fu, gongfu, same term. It merely means to put effort or focus into something. Bruce Lee parcticed gongfu in his martial arts.
