Uerus Brandy is for speed on the campaing map. Its usefull if you want ot go fast and gather materials.

you don't get the materials back it is just showing you the new recipe you found.

I don't know either and it's a good question. I presume if you wrote down the recipe in RL, you can just rediscover it again when you have access to the appropriate ingredients
