Three nurses who found themselves missing hearty Filipino breakfasts while fighting on the front lines of New York City’s Covid-19 outbreaks have taken matters into their own hands by opening their own restaurant. “When we got off from work, we were so hungry and we were craving Filipino food,” said nurse Jude Canela, who opened Bilao with friends Joan Calanog and Maricris Dinopol close to their hospital in Manhattan’s Upper East Side.

It's not that western don't love food, it's because of the car centric and suburb nature of most cities which alienates walking and family owned restaurants. France have many bread shop in every corners, Italy have many pasta restaurants and so on since they have better accessible city than USA. That's why this exist in New York which has dense city and relatively better public infrastructure and not on suburban California were many Filipino American resides.

This is being proactive. When I was delivering food for LA Bites (now defunct, sadly) I delivered a large catered lunch to a Philippine - staffed health care facility. They do like their food!

Being from Seattle and now living in the Bay Area we don't realize how spoiled we are with the diverse food options and restaurants we have from all over the globe. This is beyond admirable and I wish them success. Health-care is hard in itself working graveyard shift and running a business by day..brava!!!!

I understand very well. I worked 16 years as a Night RN. After working 3 to 4 nights in a row; I craved Garlic Fried Rice with Fried Dried Fish, Sliced of Fresh Tomatoes with a squeeze of one lemonsito and Filipino Tsocolate But no Filipino Restaurant open that early (0700 Hours End of Shift). I am very happy that you started this business. Sending Blessings to Night Shift Nurses, Day Shift Nurses and in between shifts.

They're truly Filipinos from the Philippines. I could sense it in their aura and the way they speak English. No, it's not because of the accent but because there's certain mannerisms that are unique to Philippine English (e.g. Brits and their innit).

I don’t understand what do they mean by underrepresented. Either people like your cuisine or needs to be localized enough so that it becomes inauthentic! It is easy to blame society for you not creating demand. That being said Pilipino nurses deserve this restaurant for their contribution to the healthcare industry!

It says right there in the video. You can’t just find Filipino restaurants just about anywhere. Most Filipino restaurants are in queens. Filipinos are in the top 4-5 immigrant groups in the US, next to Mexicans, the Chinese and Indians, yet you can hardly find Filipino restaurants in the city. Duh

@@HiddenAgendas it wasn't a bootleg KFC. it was originally an ice cream parlor that turned into a burger resto then shifted to chickenjoy cuz people in ph like fried chicken with rice more. the original jollibee was just by gilmore at aurora blvd before near robinson's magnolia when that mall used to be an ice cream factory. my dad used to work as a utensils supplier for sir tony tan's jollibee around the late 90s or so. his wife susan king is also from the family that runs chowking. the name of chowking is hokkien for "kitchen" but the name is also a combination of two filchi surnames, chow/chiu and king
