Ingredients:
130 g cold butter
215 g flour
25 almond flour
1/8 tsp salt
1 egg
marmalade or jam
honey or syrup
pistachios or coconut flakes
melted chocolate
Hand mix butter and flour together
add almond flour ,salt and egg and mix them together until a soft dough forms
Wrap and chill the dough forb30 minutes to 1 hour
roll the dough out to a 2mm thickness on a lightly floured plastic surface
use a cookie cutter to cut the dough
use a smaller cookie cutter or a piping tip to make holes in the middle of half of your rounds.
if the rest of the dough becomes very soft freeze it for a couple of minutes then use it.
Place cookies on baking sheet and bake at 340 F (170°C) for 15 to 17 minutes or until the edges are turning golden
Match up cookies with a bottom and top. Spread jam or marmalade on the bottom cookie and sandwich your cookies together
brush the cookies with syrup or diluted honey and top with crushed pistachios or coconut flakes
decorate with melted chocolate

۲۵گرم آرد بادام
۱ عدد تخم مرغ
۱/۸قاشق چایخوری نمک
کره و آرد را با دست مخلوط کنید آرد بادام و نمک و تخم مرغ را اضافه کرده و با هم مخلوط کنید تا خمیر نرمی به دست آید خمیر را بپیچید و به مدت ۳۰ دقیقه تا ۱ ساعت در یخچال قرار دهید
خمیر را به ضخامت ۲ میلی متر روی یک سطح پلاستیکی که کمی آرد پاشی شده باز کنید
از کاتر کوکی برای برش خمیر استفاده کنید
از یک کاتر کوچکتر حفره کوچکی در نیمی از کوکی های خود درست کنید
بقیه خمیر را جمع کنید و اگر خیلی نرم شده دوباره چند دقیقه فریز کنید و استفاده کنید
کوکی ها را در دمای‌ ۱۷۰ درجه به مدت ۱۵تا ۱۷ دقیقه یا تا زمانی که لبه ها طلایی شوند بپزید.
بین کوکی ها مربا یا مارمالاد بگذارید
روی شیرینی‌ها با برس شربت یا عسل رقیق شده بمالید
پودر پسته یا نارگیل بریزید و با شکلات آب شده تزیین کنید
