Fried Egg Tofu With Minced Pork | Using Salted Fish To Add Umami

There are many ways to add umami to a dish. This Fried Egg Tofu With Minced Pork dish uses salted fish. Some may like salted fish as the dominate flavour while others prefer it to play a supporting role to the ginger, garlic and oyster sauce. The amount of salted fish in this recipe gives this dish a lift but does not dominate it.
Make adjustments to the amount of salted fish according to your preference.
Ingredients:
2 tubes egg tofu
15 g salted fish
300g minced pork
1 clove garlic
3 slices ginger
1 stalk spring onion
Corn starch slurry (1 tsp corn starch + 1 Tbsp water)
100 ml water
2 Tbsp oil
1 tsp sesame oil
Seasoning:
1 Tbsp oyster sauce
1 tsp soy sauce
1/2 tsp sugar
1/4 tsp of white pepper
1 tsp dark soy
