THE RECIPES!
MARINATED SMOKED SALMON WITH CITRUS
Serves 4
INGREDIENTS:
12 oz Smoked Salmon
1 1/2 Ruby Red Grapefruit
1 Navel Orange
1 Lemon
1 Tablespoon Olive Oil
Freshly Cracked Pepper
1 Tablespoon Fresh Dill
1 Teaspoon Pink Peppercorns
METHOD:
Drape the smoked salmon, by slice, on a platter. Drizzle the salmon with Olive Oil. Squeeze half a grapefruit over the salmon, reserving the other whole grapefruit for the segments. Squeeze a small amount of lemon juice on top.
Segment the grapefruit and orange and place the segments on top of the salmon. Then add a few slices of lemon. Add freshly cracked pepper, dill, and pink peppercorns. Et voila! Refrigerate until ready to serve, up to 1 hour.
CHARENTAIS MELON + PROSCIUTTO
Serves 4
INGREDIENTS:
1-2 Charentais Melon (These are the smaller melons that originate from Charentes, France. In the States the closest would be a Tuscan Melon and I see those at Trader Joes all the time in the summer!)
4-8 Slices of thinly sliced Prosciutto
Freshly Cracked Pepper, Optional
METHOD:
Slice and de-seed the melons. Cut into slices, top with prosciutto. Serve with freshly cracked pepper if desired.
CHEESE TRAY + SALAD
Serves 4
*For a nice selection of cheese, I like to add a creamy brie, a salty blue cheese, and a harder cheese like a Tomme or an Emmental.
1 Head of Bibb or Boston Lettuce
1 Tsp Dijon Mustard
1/2 Tsp Red Wine Vinegar
6-8 Tablespoons Grapeseed Oil
1/2 Minced Shallot
METHOD:
Take the cheese out at least 30 min before serving to get to room temperature. Wash lettuce, wrap in a clean kitchen towel and place in the crisper.
Whisk up dressing in a salad bowl. Add mustard and vinegar first, then slowly drizzle oil, whisking all the while until a dressing forms. Season with salt and pepper, then add the minced shallot.
When ready to serve, toss the lettuce leaves with the dressing.
CREME FRAIS WITH SYRUPY STRAWBERRIES
Serves 4
INGREDIENTS:
3 Cups Creme Frais OR this substitution below
2 cup heavy whipping cream
1/2 cup Sour Cream or Creme Fraiche
3-4 Tablespoons powdered sugar. Start with 3, add more if needed after tasting
1 Vanilla Bean or 2 Tsp Vanilla Extract
3 cups fresh strawberries, hulled and sliced in half
2 Tablespoons granulated sugar
Fresh Mint Sprigs for garnish
Lady Fingers or another lightly sweetened cookie
METHOD:
Place strawberries in a bowl. Toss with the granulated sugar. Cover and refrigerate for at least an hour, overnight even better!
If using the substitution for Creme Frais, place the heavy cream in the bowl of an electric mixer, add sugar and vanilla bean paste, and whip on high until soft peaks form, then add the sour cream and whip quickly just until combined. Cover and refrigerate until ready to serve.
To serve spoon out into some footed glasses, top with strawberries and syrup, garnish with fresh mint and cookie.

    You nailed it Beth! I am French and grew up in a typical French family and this is everything my mom would do!!!! But you have to add we don’t do this everyday! It looks like a Sunday lunch to us. On week days we would just do main course. Loved it!

    Hi Beth! In Belgium, we eat melon wrapped in prosciutto or other kinds of dried ham for entree, it's really good !

    I live in the Midwest in the USA and my mother often fixed melon and prosciutto as an entrée. She added a little vinaigrette. We are Irish but grew up in Italian neighborhood. Maybe the Italians borrowed it from the French or vice versa.

    This is exactly what my mother in-law does for food. I love Amora, every trip we return with mustard jars. The marinière reminded me of Brittany, where my boyfriend's family is from. They even have a famous brand: Armorlux. Watching your video makes me miss France.

    Love vanilla bean. I like to save the empty pods in a separate bowl of sugar, the vanilla perfumes the sugar over time and the “vanilla sugar” it’s nice on many things.

    This was a great and fun video to watch! You are just glowing Beth, with happiness, my father would put cracked pepper on his oranges, and sliced peaches in a glass of red wine while eating his dinner, my dad was born 1920, in Italy and came to Canada in 1956, my friends were so inspired by all the neat ways he would eat his fruit and vegetables

    So glad I found your channel! I am loving the French cuisine and how you set up tables for traditional French breakfasts! I want to learn more recipes, the French cuisine just looks more healthy, simple and fresh lol My stomach can't handle Hispanic and American food anymore it's too heavy for me.

    Another fabulous and inspiring video. I’m definitely going to be trying the desert out, and the smoked salmon with grapefruit, orange and lemon drizzle over it with a small dash of olive oil. That sounds incredible. Your mother-in-law‘s vinaigrette sounds delicious, so another dressing to try.     One of the best markets I had stumbled upon was in Paris. It was just like this and there was SO much variety of items, produce, meats, seafood, breads.. everything! I can’t wait to go back and shop the local goods!

    Thank you for this fabulous visit. I loved the easy and uncomplicated way you assembled the lunch BUT those serving dishes are divine! The salmon and tapenades looked like works of art on the beautiful serve ware! You brightened my morning from a wet, miserable winter's day in Cape Town (South Africa).

    You're so fun to watch, I feel like I'm visiting a good friend in France and they're telling me the tips and tricks of market shopping that only a local would know. I've had really fun French neighbors in the past, and a French BF for 4 years. I miss all of their traditions when it comes to serving food. I didn't realize how much I miss the French way to do things, so delicious and practical. Thank you.

    Wow Beth, if you told me that you were born & raised in France I would totally believe you! I understand that the time spent with your husband definitely helped a lot, but it's still so great to see you getting along with the locals so naturally as if you're one yourself.     LOL! Oh you're too kind to say that. It's enough to get "in and out" of trouble! Ha! No one in my husband's family speaks a word of English so it was pretty much "sink or swim", it took about 20 years to really feel comfortable speaking it and getting around, but it's been a rewarding process for sure!

    Hi Beth I really enjoyed your video and your simple lunch. Its very true hère in France everything is such good quality and so délicieuse with a minimum of ingredients. I love my local market hère in France on the cote d'azur where I have lived for over 40 years. The best tapenade is made with green olives and you could probably add some caviar D'aubergine. Next time you go to your local boulangerie they will probably have bags of croutons made with the left over bread from the day before I have never seen your cheese cake served for desserte here, but I often buy it for my Quatre heure, after all I am English and still enjoy a cup of tea. Mxx
