Freezing Green Onions ~ Money Saving Tips ~ No More Cash in the Trash! ~ Noreen's Kitchen

Today I am sharing a quick tip on how to save green onions from the trash! I don't know about you, but I love green onions, I don't love how quickly they go bad. No matter if you leave them in the produce drawer or put them in a glass of water, they go bad very quickly. Even though these are relatively inexpensive in the grand scale of things, if I toss one bunch of the two in a bag I am tossing cash in the trash. I don't like that and neither should you. So I decided to try cutting some up and freezing them. It worked like a charm so I am sharing this tip with you!
I don't, honestly, know why I didn't think of this sooner. I do it with bell pepper, hot peppers, onions and leeks, why not scallions or green onions? I normally use these in dips, sauces, soups, on top of a baked potato or tossed into a stir fry so using them from frozen is not a problem. The flavor is still there but these are going to last much longer in the freezer than they ever will in the fridge!
I simply chop them up into my preferred configuration. I use the whole thing, greens and whites together. Usually cutting about 1/4 inch thick. Then I just toss them into an airtight plastic container and freeze. When I want a handful for a stir fry or a bowl of ramen or a baked potato they are waiting for me. They thaw quickly in a soup or stir fry or even on top of that steamy potato. These can easily be tossed into a green onion dip and you will always be ready when you have these on hand!
I know it may not seem like a big deal. Tossing out one bunch out a a package of two when you only paid $1.25 for it. But if you do the math over time you could be throwing a lot of money away. Yes, you could dehydrate these, and yes, I have a dehyrator, but then I am spending money on electricity to save money on some onions. My freezer is always working so this is the route I choose.
You should only freeze what you think you will use in about three months time. Otherwise you may end up with some onions that are void of flavor because the freezer has sapped them of all their goodness. So keep that in mind. I usually only have about a bunch at any given time, taking a cool nap in the freezer. But you should keep what you think you will use.
Tips like this can be helpful and in a world where every penny counts, I had to share. I hope you enjoyed this and I hope you learned something that will be useful in your life! I hope you give this tip a try and I hope you love it!

    I froze green onions like this. When I thawed them out, they were mushy. Fine for cooking with, but they definitely won't work in a salad or for a saute where you want a crisp bite and firm texture. If you reach for them when you want to make a salad, you'll be disappointed. Still, this is great tip for not wasting food. I really liked what Noreen said about paying twice as much when you throw half of something away! Eye-opening.

    Exactly what I was about to write; even with the same 'em. I feel the same way about waste. I bought a huge pile of green onions and garlic cloves yesterday - lucked out at the store because this is the first time I've seen such a large pile for so little money. For once I got the bounty.

    Thanks Noreen. You can also flash freeze them. Once you cut them up, spread them out on a cookie sheet and place in the freezer. Once frozen, put them in individual freezer bags and you will have the right amount that you need. Plus, if you lay the flat, they take up less space in the freezer than the plastic container.     Thank you for this tip. As an Asian we have to use green unions in almost all our daily cookings However often times we have to throw away some when buying too much not using soon enough. Now I can freeze them and save money and time

    Another thing you can do instead of sticking them in the fridge is to put them in a glass or a jar with a little water and leave them on your countertop.They keep growing! Cut off what you need. Refresh the water every few days. They keep coming back.

    @@ledcruz3057 I don't. I just keep them on my countertop and keep an eye on the water level. When it looks a little murky or the level is low, I refresh the water.

    We freeze ginger, garlic, bellpepper ends, mushrooms, diced onion, celery, bananas peeled, chicken bones and fat for stocks, carrot diced, buttermilk, and i never thought about green onions. Thanks Noreen!

    I wouldn't have thought to do celery or mushrooms. Do you do anything special or can you just throw them in a container and put them in the freezer?

    They really should be properly balanced before being frozen otherwise the celery will turn to mush and the mushrooms will be rubbery.

    Also it’s REALLY convenient to just reach into your freezer when you want sliced green onions for a recipe instead of reaching into your fridge to find slimy ones you can even think of using.

    I love your cooking/money saving/ life tips videos!!!! It’s easy tips but stuff I’ve never thought of🤔 so helpful for the younger crowd or folks that need that reminder.     I love it! Not only you are saving the money you paid for the onions but also sometimes you need them for a recipe and if you don’t have them, you have to go to the store to buy them, spend money on gas, then you go to the store and buy other things you wouldn’t buy if you were at home, so you end up spending more!

    I just watched this video and thought, "Why not?" So I went to my vegetable drawer in fridge and pulled out 3 bunches of green onions. Chopped them up and put into container and put in freezer. While I was at it chopped a mixture of colored and green peppers and froze them also. Great tip..thanks!

    Ooh, super useful info. I'm gonna try this. Since the pandemic, though, I started a farm in my apartment, propagating vegetables from grocery scraps. What I'll probably do is plant the roots of these onions, and freeze the rest. Thanks for the tip!! :D

    I've been freezing onions for years also, along with peppers, celery, and herbs. I also juice and freeze lemon and lime juices in small-cube ice trays, and leftover canned tomato sauce or paste, then bag up the frozen cubes. It is amazing how convenient it is to grab these pre-chopped items from the freezer! Thanks for your video.

    I just in the last year have started freezing a lot of fruit and veggies. With the internet i have learned all kinds of things. I love your channel. Im 64 and never leatned how to can but i may take a stab at that. Tools I'd need will be costly. My grandmother passed away 6 yrs ago and i gave all of her canning supplies to a neighbor. I wish i had keep them now

    I freeze cilantro, also. You can just wash it and freeze the bunch whole in a plastic baggie and cut off what you need when you need it.

    Good to know! I save mine in a airtight jar with a paper towel to absorb extra moisture to keep it from getting slimy 😘 But that only lasts for about 2 weeks. Now I have long term method too.

    @@user-nm3jh4ow3y sounds like if you shake off the excess moisture, it doesn’t freeze so solid you can’t still cut it with scissors. I’m so excited to start ordering more fresh herbs to use at home now that I know how to make them last!

    yep I have to cut up EVERYTHING as soon as I get it home. A lot goes to waste if I don't do this right away. I freeze everything on a sheet pan and then put in separate freezer bags! I also do up a few "soup bags" with a bit of each veg. (fresh veg from the farmers market is so good compared to frozen bag of veg from the store). Just throw the bag - well not the actual bag - in with the stock to make soup - a real timesaver! If I'm freezing cooked chicken breast I add one or two of those to the soup bag. Makes for a good freezer bag of chicken pot pie also. For a party of one this is a timesaver.

    Terrific idea. I hate wasting these but didn't think to freeze them. I use it all too. "I paid for them, I'm going to use them all". Yep, lol. I've even taken to using the tip chefs give when coring, chopping and peeling outer layers of veggies. To save it all and accumulate in freezer bags in the freezer, even onion/garlic peels (which ad nice colour and flavour) for soup broths. It makes the best broth, just strain well and clarify to take any scum off.

    Froze them in container like the video but was doubtful that they would turn out as nice and unstuck. I was so wrong. This is the most useful tip I have had with freezing green onions! They are perfect! I made my European potato salad (sliced warm potatoes, oil and vinegar shaken mix, salt, pepper, sometimes bacon bits, and sprinkled with green onions). I cannot tell the difference between these frozen bits that immediately thaw or the freshly cut. I'm a single person who does not eat many green onions and got tired of throwing most of them out since I don't like waste. This solves a huge problem for me as green onions are always available. Thanks so much!
