    How terrible that allergen scare must have been! I cannot even imagine… Thank you Jesus for looking out for Gabriel! Thanks for taking us all along and showing us how you organize and take stock prior to your pantry challenge. I’m looking forward to joining along this year. We are a family that uses dairy and so I anticipate having to still purchase a gallon or two of milk during the month.     I like to keep a magnetic white board on my outdoor freezer so my inventory is always accurate. I have listed everything in the freezers with the amount next to it. When I take or add something I just quickly change the number. Just an idea instead of typing it. I got my whiteboard at the dollar tree.

    I have two stocked freezers for potential food shortages (for 1 person) and now am planning to move from VA to TN in the spring. Instead of continuing to stock up, I'm now eating it!     I am in a similar situation, I have a 3.5 cubic foot chest freezer, a mini fridge freezer, and a regular above fridge freezer stuffed full and I am moving at the end of May so I have to start eating through it instead of making sure it is stocked for an emergency situation

    Thanks for all the great ideas, my sisters and I take turns staying and taking care of our 90 year old Dad. So when I go to his house and stay for a month or two I always bring things that I have canned and preserved. Sometimes it is challenging to come up with something he will eat , so I am looking forward to seeing what meals you will fix.

    Such a great challenge for everyone that preps. I would have been terrified when I saw the cheese, you have to be so watchful. People just dont realize what a little bit of something can be so enormus for someone else.

    I have the exact inventory sheet. One tip is to write the date when a particular food ends. It allows me to see how much more or less to preserve the next year.

    Love you videos! I need to take inventory, and would love to know how David and Gabriel did that inventory sheet, or if they could do a blank sheet that could be downloaded, and printed, and then filled in by us?? We could color in the blocks with our counts, then black them out, or whatever. So grateful you found the cheese. I would think your butcher would exchange that meat with something useable for you, since he made that nearly deadly mistake. We are a dairy consuming family, so going to the store for those items will still be happening, but reducing the trips to perhaps every 2 weeks will be a blessing. I wish we could buy raw milk here and I could make cheese, butter and cottage cheese myself-but it’s not possible, and I’m not in a position for a milk cow! I’ll watch your linked video and see what other wonderful things I can learn!!

    You are so organized. I have been canning for years. One of my downfalls is I don't use my goods on a regular basis. Instead I just run to the store and get what I need. This is all going to change. I have started an inventory of the food we have on hand. Perhaps I will join in the challenge. You and your family are awesome!

    Thats a great inventory the boys created. I'm terrible at freezer inventory, ill work on that now though. I don't like relying on freezers too much so we just have a huge deep freeze and a fridge/freezer on at the moment. A small deep freezer stays off as a spare or when we have used most of the deep freezer food and want to keep our power use down. Congratulations on all those subs. I'm sure we'll really enjoy watching you document the challenge. Great job everyone 🤩

    I already do this January through March (ish) so maybe I will join this year. Just found your channel today. I raised my family of 7 like this in the 1980s and 1990s and I was such a weirdo for back then. Guess I was ahead of the times lol, or way behind. Anyway Im older and it’s just me now but still a way of life. Once you start becoming self sufficient and prepared I don’t think you ever go back.

    I don’t know how you get done all you do, except that your family helps out. It is just the two of us and 2 puppies! We are elderly and have survived the 18+1 this past August. That weaponized thing took a month out of our lives. We barely kept up with the garden and canning! We live in SE Ohio.

    Always look forward to your pantry challenge each year. I do a bit of the same, only thing we buy for 2 months is fresh bananas each month as my elderly mom needs the potassium. Otherwise, our pantry and freezers are fully stocked from the gardens and buying dry goods, etc months before.

    I did low spend this month too, had multiple full freezers to start with. Going to try and go through what we have in 2022 while replacing when we can snag some great desks! My 2021 meat deals may be nonexistent in 2022! Sad

    Oh what a scare! Thank you Lord for watching out for Gabriel!! You will love at least grinding your own meat and making your own sausage. I have a LEM grinder and plan on getting their blender/mixer this year because I want to make more. Picking and choosing the different seasonings and knowing everything that goes into your meats will be amazing. I have two huge chests and a standup freezer and wish I'd seen a commercial one first that's a beauty. Where has the year gone and time for another pantry challenge?     I thought I was the only one who inventories the deep freezer. I have a small notebook. Every time I add something to the freezer I jot it down in the notebook with a date. No 2 dates are put on the same page. So the older items are in the front and newer items are in the back. I just scratch through each item as I use it and test out the page when it's done. Works for me.

    That is a lot of freezer goods. When they start turning the screws on homesteaders and the power doesn’t come from the plant anymore, that’s going to be one very big bbq. Hopefully you have an alternative longer term source of energy for those appliances. Good luck

    As I mentioned in the video, we have all our freezers hooked up to a backup generator. At that point you just start canning it up on the propane stove. We have had to do that in the past. And if we couldn't can it all, we invited friends over and sent them home with meat. Several bartered with us for other items we needed.

    I have a canning spreadsheet that I keep each year. I track date, product being canned, amount of produce used, cost if I had to purchase the produce, how many jars I got, the last column is for how many jars are left in the spring or the date I ran out. It has been very beneficial for knowing how many jar lids I need as well as how much money I need to save to purchase the produce we don’t grow

    We usually do a no spend January but I am doing the pantry challenge this year! Now we don't have access to fresh milk so we will have to still get that but I am excited to try! We have a special needs child so this is going to be truly a challenge.

    Even if you aren't ready to do all of your own meat processing, you could just take some ground pork and make your own brats. I'm going to be thawing five pounds of ground beef to make my own summer sausage for the first time. Mom used to make it and it was SO much better than store bought or from the meat locker! Sadly, I don't have her recipe, so I'll need to find some and experiment.

    I also do an inventory but i dont have half as much as you do, (just a poor memory) as to what is in my 3 freezers! I also do1 of my non frozen items so that i know what i need to buy. I dont live on a homestead so i have to rely on Costco and the local store!

    Wow, thankfully you spotted that cheddar. I would have assumed they cleaned the machine between each order. I loved seeing your freezers; I always think mine are messy, but I think I know mostly what I have in them! I’m looking forward to trying the pantry challenge, I watched last year but didn’t participate. My only spend would be for my husband who has lactose free milk, (he doesn’t like the nut or oat milks). He’s also GF so lots of from scratch cooking here too. My daughters and I are vegetarian, so we also have food challenges. Would coconut oil work in David’s frosting recipe from your thanksgiving video? Looking forward to the new year & cooking along with you x

    What a sad loss of wonderful pork. Praise God you found it before he ate it. I have a friend who has a daughter with anaphylactic allergies to dairy as well. They spent a couple years taking her to a specialist to get her to the point where she no longer has to fear small exposures. Have you ever considered doing exposure therapy for Gabriel?

    We live in Alaska and have more fish than meat in our freezers. Right now a huge wind storm caused power lines to go down and we’ve been without power for a couple days. We are on vacation in Florida but our adult son is home and using the generator to give all the freezers time to assure everything stays frozen. We have multiple freezers in different locations as well. Do you have a small generator and enough fuel to do the same?

    I noticed you had some canning jars in your freezer. I never knew you could use them in a freezer. Do they break ever? Any special instructions? Thanks.

    Similar issue recently except I. React to potato starch and this place I normally order from must've cooked my food with used fry oil because I had an autoimmune response which is disappointing and disgusting

    Does beef tallow need to be refrigerated? I have always thought that they are shelf stable..
