Freeze-Dried STARBURSTS - I Did It!

**Note: Using the oven method to warm the trays above 150 degrees may lead to your Harvest Right FD warranty becoming void. Speak with a HR rep before using this method. The FD settings alone at 150 degrees did fine so there's no need to use the oven in my opinion. If you are out of warranty on your machine then you could use both methods.

Freeze dryer will flash over temperature and tell you to shut down immediately. Make sure trays in freeze dryer are not hot before putting in trays.

If your worried about warranty, get a thermal temperature gun. After trays heated in oven, take tray temperature and wait til trays come down to 150° and then put in the freeze dryer. Doesn’t take long and starbursts are still soft and puff up nicely. Hope that helps take warranty concerns away.

The Starburst mini would work to do the ones you said you would cut into smaller pieces. That way you would cut down on unwrapping and cutting. The ones you warmed up at 200 degrees then the freeze dryer.

Question: I read somewhere that you can't put the FD trays from the oven directly into the FD-er or it will damage it and void the warrantee so I'd been doing candy in the oven on a cookie sheet & then xferring it to FD trays so that the tray wasn't hot. Really a pain! I'm assuming you are saying it's not an issue?

I've heard that Harvest Right has said heating in an oven to higher temperatures than the freeze dryer goes voids any warranty because they can't handle temps that high. Is this not true??? Because I'm not really cool with voiding a warranty on thousands of dollars worth of machines.

I don’t think you want to go to 300 degrees in your oven because you will get a warning sign from your freeze dryer. I will do up to 240 degrees in my oven but usually I stay around 225 degrees for my oven temperature No it won’t warp your trays

Pre heat ur jollybranchers for 45-60 min, it only allows 20 min at a time so stop at 19 min and let it count down at more time ext up to an hour, at 150 they only take about 2 ton3 hours to complete also cycle the shelves in that 60 min pre heat, gummies r a 12 hour candy and u gota let em cool down to room temp they will be crunchy

I've got an idea. Tell me what you think!! I've got a customer who keeps asking for Starbursts. I tried the minis and they didn't do anything but get really hard.... What about melting the Starbursts pretty much all the way in the oven in little silicone molds? I bought some hearts for February. I'm planning on pouring ice cream in them and maybe even brownie mix. That would be a first time experiment on making molded treats. But also what about melted Starbursts!?? I'm not expecting that they'll keep a molded shape when they pop up outside of the mold. I wouldn't even want to fill them all the way up. Maybe just halfway... I'm certain the bottom a beautiful heart. I'm concerned about putting too much candy, also, because I don't want the center to be chewy. I know you didn't want a puddle of candy in the oven is what made me think of that. Do you ever use molds? Have you ever poured ice cream out and used the molds that accept sticks? Thoughts on the starburst in the mold in the oven? Then right to the freeze dryer? Lastly a question about the updates. Maybe I don't have their most recent!? I did the last update they gave me in August of 2023 and I wanted it to include more features for candy making... Like a way to go right into the heating and drying, skipping the whole chamber cool down for the first 15min. But the most important one is I would like to prevent the holding pattern at the end going into another freeze! That's deadly for candy for it to be freezing cold and then hit the air and start getting sticky. I literally have to "start new Candy batch" and then take it out in the middle of being warm and dry again. Obviously I really try to not start a batch unless I'm going to be there but things happen. I did get the freeze dryer for food preservation but I'm having fun right now! I've had it less than a year and I've got a good number of batches under my belt. Around 40. I could do so much better. I have a typical day job and I'm processing things for myself and close friends and family but if I wasn't truly interested in homesteading as a future retirement plan, then I would begin to really heavily advertise and this would definitely be another way I can see someone retiring!
