Hey Jared, I just wanted to ask you, what do you put on your sharpening stones? Is that just water because my stones just absorb all of the water so I didn’t know if you used anything special

@@Willtombo10 no, I personally use soapy water, a mix of dish soap and water on these specific stones. You can use just water but a mix works better, but it depends on your stones and what kind they are, you might have stones that need to be soaked, or they should be used with oil. These are splash n go so they are not like yours, do you know what stones you have

Question: how does AUS10 steel compare to D2?

@@mr.unstoppable8593 d2 should have more edge retention if it's heat treated well, but many production companies don't doit at its peak potential so it can be all over the board with edge retention, sometimes similar but usually better that aus10, and but it's not as stainless as aus10, and aus10 will be alot easier to sharpen than d2 as far as time on the stone goes

I wish I was half that good at using stones. I don't have the patience and because of that, the skills. But since getting my Work Sharp Precision Adjust, I can sharpen like a pro and get a seriously razor sharp edge!!! 🔪🔪🔪 With the aftermarket stuff from Etsy, like the brace for the clamp so it doesn't budge, the angle spacers so my angle NEVER changes, and a few other things, it's a ridiculously awesome sharpening system, especially for the price!!! But I LOVE watching you sharpen with stones. Seems very "zen-like" to me!!! Thanks a ton for all of your videos too 😎👍🔪

@@charliebaker1427 so do I, I sharpen every way so I can be versatile, I do a perfect convexed edge this way, but I also sharpen on bench and other ways. In the field having a flat bench to sharpen on is not possible, and does not hinder me from Sharpening my edges

This is how i do it, i find i can put a better edge on a knife by feeling it than setting the stone on the table and doing it "normally"

That what you should be doing, 1 is course to remove material, the next does the majority of sharpening and the next makes the edge fine and polished
I have a Victorinox kitchen knife 8 inch blade that's gotten dull. I'm from India (the land of the call center scammers). I'm just confused about what stone to buy they seem very unreliable and I don't wish to mess up my knife. I absolutely love it. Could you help guide me please?

Why didn't you hone it with a ceramic honinge rod and then used a shtrop on it?
Why check how sharp a knife is with a paper cut? Sure, it shows that the knife is sharp, but cutting paper is going to ruin the edge really quickly

Is there a particular reason that chefs use whetstones completely differently from pocket knife enthusiasts? They tend to strongly discourage pushing the blade on the stone and only perform pulling strokes

I'd say it is unnecessary to begin with. Angles are a matter of personal preference. If you just freehand it for long enough you quickly get a feel for what you want. It's like those guys who this or that many ft lbs to tighten lug nuts or spark plugs, who does that?

AUS10 is an awesome steel, at least in my Cold Steel ẞpartan it is. I can practice for 45 minutes on a dead standing tree with powerful thrusts and slicing chops, and the strop it on the same tree and cut junk mail clean in half when I get home. I believe a lot of the quality of steel's is dependent on the tempering and hardening processes. Because Ive noticed big differences between manufacturers using the same or similar steels. I know this much, the Cold Steel Spartan is an ultimate pocket folding fighting knife. I got others such as the Counterpoint, the Luzon=(unsafe POS), and a variety of kerambits and others, both fixed and folding, and the Spartan is more powerful and has the same effective range as my much longer blade CounterPoint. Both of those are AUS10.
Are these whetstones? Or colored diamond stones? What’s the make, please. Thanks (edit: I’m a dumbass, nevermind….)

It looks/hears like you push hard on the stone… from a scale from 1 to 10, 10= massive pressure on the edge , how much pressure do you put on your knife when sharpening?

Best answer is going to basically be “it depends.” But you never want more than like… idk maybe like a 4 or 5ish…? At very very most… if that. Probably more like 3. But even then, it depends how dull the knife is. You really want the stone to do the work, though. But you’ll apply a bit more pressure earlier in your sharpening on each stone and then less and less as you refine the edge. Then when you switch to the next stone, you might want to go back to applying just a bit more pressure again and then less and less as you refine the edge more. So it’d prob be more like starting with maybe a 2 pressure, then down to 1.5, then 1, then .5 and then basically like the weight of the knife or feather weight. The idea is basically to set your edge up for work on the next stone, which will be significantly higher grit. So you want to end with very light single strokes on each side to get it as keen and clean as you possibly can before moving onto the next stone. Because you want to make the work on the next stone as easy as possible, since you really want the stone to do the work, more than you leaning into it. If you have to like… put your body weight into it… lol then you either need a much coarser stone, or just a new knife haha. Pro tip: if you’re on a higher-ish grit stone and kinda feather-weighting it, you can actually feel the resistance change a little when the edge mates up to the stone and you hit the right angle. Typically works best starting with at least like 800-1000ish grit.

All these guys like oh my steel is such and such I use these varying stones. Meanwhile me over here like mine is steel of some kind with a generic sharpener.
Why you holding the rock like that? Seems uncomfortable and awkward as hell, like why not set it on the table?

They use various steels ranging from D2 on their lowest cost ones, to M390 on their highest end ones. AUS10 is used a lot on their $70 - $80 price range knives. I have a Drake in AUS10 and I paid about $70 for it if memory serves me.

Lotta begginers watching this and its generally not good to reccomend people to test the sharpness of their knives on themselves. You can tell enough from the sound and pressure when cutting paper to see if its a good edge.

@@Murimz if someone doesn’t have enough common sense to test a knife by shaving their arm and not cutting themselves then they have no business sharpening knives. If they can’t test a small spot on an arm then God forbid they shave a face, neck, armpits and legs. Not to mention around genitalia.
