We did this when we first got the game and unfortunately we can't change the car set up unless we build the ramp again due to it being in the build menu.

have you ever seen the top gear episode where richard hammond races against a falling VW beetle? this reminded me a bit of it.

So I'm a game developer, the unloaded parts are done on purpose as these are out of bounds from what the player would normally see. Parts of the map are generated once the player can reach or see it on the scope of what is intended. This is done to save a lot of loading times and performance.
