In a world of mass-produced goods, it can be refreshing to see someone working with their hands to create something beautiful and unique. This is especially true when it comes to carbon steel cookware. Forging carbon steel cookware is a lost art that is being revived by modern-day blacksmiths. Not only is the process of creating these pieces of cookware fascinating, but the end result is a piece of kitchenware that is built to last. In this blog post, we will explore the process of forging carbon steel cookware with a modern-day blacksmith. We will also learn about the benefits of using carbon steel cookware and why it is such a popular choice for home cooks and professional chefs alike.
What is carbon steel cookware?
Carbon steel cookware is made from a type of steel that contains carbon. The amount of carbon in the steel affects its properties and determines what it can be used for.
Cookware made from carbon steel is durable and conducts heat well. It is often used for making pots, pans, and skillets. Carbon steel can also be used for other kitchen tools like knives and griddles.
To make carbon steel cookware, the steel is heated to a high temperature and then shaped into the desired form. This process is called forging. Forging carbon steel cookware gives it a stronger structure and makes it less likely to warp or crack under high heat.
If you're looking for a sturdy and reliable option for your kitchen, carbon steel cookware is a great choice.
The benefits of carbon steel cookware
If you're looking for durability, carbon steel is the way to go. This material is known for its toughness, making it ideal for cooking surfaces that see a lot of wear and tear. Carbon steel also has great heat retention properties, so your food will stay hot longer after you've taken it off the stove.
In addition to its cooking benefits, carbon steel is also easy to clean and maintain. With very little effort, you can keep your carbon steel cookware looking like new for years to come.
Is carbon steel cookware non-stick?
When properly maintained, carbon steel cookware does not stick. Carbon steel is known for its ability to develop a natural patina, or layer of seasoning, that is extremely non-stick. When properly seasoned, a carbon steel pan can be used to cook just about anything.
So why would anyone want to use carbon steel cookware? There are a few reasons. First, it is an excellent conductor of heat, meaning that your food will cook evenly and quickly. Second, it is very durable and will last a lifetime with proper care. And finally, it is relatively inexpensive compared to other types of cookware.
If you are interested in trying carbon steel cookware, we recommend purchasing a pan from a reputable source. Look for local artisans making these gorgeous pieces of art. Local suppliers are also usually happy to help answer your questions and give you extra advice.

Watching this video really reminds me of my grandma’s steel wok, she cooked with it so much that she managed to wear a literal hole in the middle of it with her steel spatula that’s totally deformed from use, the food that comes out of that piece of cookware tastes like heaven. I just had it repaired for her a while ago.

I love the joy in Tristan's voice about the pans. ^_^ I dunno why this is so important to me, but it really is. This is the kind of skill that's been around forever and will always be good to know. Also, Forged in Fire kind of brought me here. : P Anyone else???

Not sure if you guys take suggestions but a really cool place that I think you guys should take a look at is Lamp Pizzeria in North Scottsdale. Matt is the main pizza cook, he's canadian, went to italy to learn how to cook pizza, and had a custom made brick oven made for his restaurant. Really good and interesting place that serves Neapolitan Pizzas.

it's the purpose built nature of the skillet that makes me think theres basically no reason for the average person needs to have a $260 handmade pan when cast iron skillets are 30 bucks everywhere - i guess its the professional kitchen they're targeting

This was a super video! I’m a beginner blacksmith - if I wanted to try my hand at making a skillet, where would I get a flat round die like the one you used in your shop press? That seems like a better way to go than trying to hammer out the sides while keeping a flat bottom.

I've been following another maker out in Australia called Solidtekniks. One part of their design I find to be a smart thing is the singular piece construction that eliminates the rivets and joinery where the handle meet the pan. Really like the handmade look of your tho; theirs is slightly generic in shape. Do you make lids for your skillets and pots?

  • @dertythegrower

Awesome. That's perfect timing because I was just learning how toxic the modern pots and pans are that most people have with the toxic coating that chips off into the food in tiny particles (that same coating giving cows three eyes in lab test)

Frying eggs, patatoes, unions etc. All you need to do is wipe out the excess oil. When baking meat I put some water in it after cooking, boil the pan clean and rub it quickly with a brush, a drop of oil in after and that's it. I have one Stainless steel pan for all acidic foods that attack the oil layer and for the rest I only use my carbon steel pans. Never going back!
