Foil Packets on a fire

Campfire corn on the cob & potato packets
For the corn:
Take off husks and clean corn
Cut an approximately 9x9 piece of foil. Turn the foil to an angle and place the cleaned ear of corn in the middle. If adding butter and seasonings, do so now. Then take the corn closest to you and roll it over the ear of corn, roll once then fold in the sides then finish rolling. You are doing it like you would a burrito. Repeat till all the corn is wrapped in foil.
Place just outside of the hot coals and let cook for about 20-25 minutes. It is helpful to turn the corn and move it every 5-7 minutes to ensure it cooks evenly and stays near but not on top of the flame.
For the potato packets:
1 lb small “B” size potatoes, cut in ¼’s to make cooking faster
Any vegetables you like but cut smaller, so they cook the same time as the potatoes. I used sugar snap peas, bell pepper, onions, Swiss chard.
If using a meat protein, make it into small pieces like boneless chicken so it cooks the same time as the potatoes. I used smoked sausage for Joe’s packet.
Seasonings such as garlic, pepper, salt, Cajun seasoning etc.
Sauces such as BBQ, salsa, buffalo sauce. I used green chili sauce for these packets.
Cut an approximate 9x13 piece of foil & parchment paper. Put the parchment paper on the foil then start placing items in your packet with potatoes first since they take the longest to cook.
Then peppers, onions and snap peas.
To Joe’s packet I then added the sausage, seasonings and 1 spoonful of the green Chile sauce.
To my packet I then added the Swiss chard, seasonings and 2 spoonsful of the green Chile sauce.
Close the packets by bringing the top and bottom together then fold in the sides.
Note: Try not to overfill so they don’t take too long to cook, and you have enough foil.
Place over coals for 25-30 min but moving the packets every 5 min to keep them evenly
cooking. Ours ended up taking about 45 min b/c our coals got to cook and Joe had to add more
wood to the fire. Just check them at 30 min to verify the potatoes are done.
Other suggestions:
Southwest packet: potatoes, black beans, salsa, peppers & onions, taco seasoning
Sweet potato packet: sweet potato, zucchini, onions, asparagus, chili & lime seasoning
Italian packet: potatoes, tomatoes, mushrooms, onions, olives & Italian seasoning
