Tangzong: 1/2 cup milk 1/2 water 1/4 Bread flour Yeast: 1 cup warm water 10 g yeast 2T sugar Bread: 4.5 Bread flour 2t Kosher salt 2T sugar 1 egg 1 egg yolk 1/4 cup room temp butter Mix all ingredients in a kitchen aid mixer and add in 1/4 cup room temp butter for 10 mins let it proof for 1.5-2hrs. Punch down roll out 18 little balls (measure the dough and divide 18 for the approx grams for even sizes) Proof for 1hr Brush with egg wash Cook 375 approx 20mins Brush with butter and top with kosher salt

Always used a very similar recipe from Joshua Weissman for burger buns - never thought to use a similar dough for dinner rolls too as I’ve tended to do crustier individual ones to go with soup etc, but I’ll definitely start using this. Thank you, grateful to constantly be learning new things from you! :)

You can use the drawer under the oven as a proofing drawer (as long as oven isnt on) but most people use it to store baking pans

Only speed 2 up to 5 minutes total when using the dough hook. Per KitchenAid.
Which oven program? Like ventilation or just heat coming from up and down?

She wants you to buy the cookbook You can read the transcript, but be careful, it’s not always correct. I usually do that and watch the video multiple times

Sharpen I'm making this bread right now to go with my New Years dinner I made the tongone 1st time my bread proofed nice now I'm waiting on last rise I wish I can take a photo I never did the tongone method my dough is beautiful and smells great I made a whole garlic roasted chicken arroz con gandules and coco and Mac and cheese 🧀 My way my special Mac thanks for this I love u and adore u you inspire I am going to get your cool book Happy new year

Using unsalted butter allows you to control the salt level by only the salt you measure and add. You can use salted butter and add less salt. Some salted butters have more salt than others, so most cooks use unsalted, especially for baking.

That’s the whole point. She’s using kosher salt you can see, so you don’t need salted butter. Most professional cooks always use unsalted butter and add their own salt to control the taste better…. I only buy unsalted butter for baking myself
