    One thing I learned by doing was, if you put the shredded zucchini in a strainer inside a bowl, and put in the fridge for a day or two, it will strain out a lot of the water, thus shorter time in the dehydrator.

    Not only in this video, but most of your videos you make it a point to be inclusive. 40 years ago, just starting out I didn't have what most people consider basics today. My holiday gifts were homemade cookies, all mixed with a wooden spoon. Many of the trending things of today, were things done out of necessity in years past and were looked down upon. Everyone deserves to be included. Thank you for your thoughtful intentions. They don't go unnoticed.

    Wish I had known about this back in my teens when I was a celiac to wheat & grain related to wheat mon grew LOTS of zucchini! Wheat free ground flours are expendsive

    If you really want those flours to store a lot longer, store them in mason jars and vacuum seal them with a Foodsaver or other vacuum sealing device. I made cinnamon apple chips 2 years ago and stored them this way. We just opened them and they are as crisp as the day I processed them.

    Hi Darcy, I have been following your channel for a few months now and have learned so much, but have been wanting more as I am so unorganized in my prepping. The small room off of my kitchen that we turned into a pantry (our kitchen is very small) is just a mess and has become more of a catch-all room than what it is intended to be and I am desperate to fix that. I received my first dehydrator as a gift from my family about four years ago (a 4-tray Excalibur) and very soon realized that 4 trays was just not going to be enough. Because I was saving to purchase an All-American Pressure cooker at the time, I had to place the larger dehydrator on my wish list. Then I got very lucky and the All-American went on sale and I jumped at the chance and spent the next few months teaching myself how to pressure can with the help of several wonderful ladies on KZread. I have canned some really delicious things and some very interesting things, some of which were utter failures, usually due to something I did wrong (like wrong timing) like the time I canned 4 large canners full of quart jars of green beans for 90 minutes and turned them into mush. Then last year my grandchildren and sons gifted me enough in gift cards that I was finally able to purchase a larger nine-tray Excalibur dehydrator. Now along with my little 4-tray, I have a total of 13 trays to dehydrate with. I am slowly learning all the different things I can dehydrate, like the previously mentioned green bean failure that I recently dehydrated and turned into powder. Now we are using the powder as a sprinkle topping for our dogs' food (never let food go to waste, even overcooked green beans...lol). Today I purchased both your "Beginner's Dehydrating Toolbox," & your "30-Day Pantry Challenge" EBooks, and can't wait to look through them. Thank you so much for all the knowledge you have so graciously shared and taught to so many, you are truly a Godsend to all of us. Blessings to you always

    I feel your pain with the organization. We have no pantry other than a converted coat closet, so have things under the beds, behind the couch, tucked into the bottom of closets, etc. ((HUGS)) You'll get there!!

    I will be drying on trays in the barn attic then using a mortar and pestle to grind it coarsely. That way I am well practiced for grid down.

    Hi I just ordered 2 of your basic dehydrating books ,I enjoy watching your videos there very down to earth iv only ever dehydrated apples and oranges and kale now I'm doing alot more ,I need to thank you it's rather enjoyable when you get to the end results, I even invests in a grain slash dehydrated food mill I love it and a manual pump canning jar sealure,

    On the vitamix, put a coffee filter under the lid; it will stop the veggie dust from pouring out, and you can open the lid immediately. Learned this from another site, that learned it from another.

    I like this idea. As an herbalist I am always grinding powdery stuff and usually throw a damp rag over the top to catch what escapes through. I didn't love the plastic idea, but hmmm, a coffee filter. I will try this. THX😁

    I'm gluten free and use guar gum to put the consistency of gluten in my flours and it works well, usually I find half a teaspoon to a cup of flour, but you can play around until you get baking that has the stretch and doesn't crumble.

    We are in a heat wave in California. Sacramento (45 min from me) just broke the record of 116°, so it’s HOT. 🥵 I bought an outside hanger that has 7 zip-open slots and it’s screen material for hang-drying outside. I’m going to give this a try tomorrow. Thanks for sharing.

    My daughter gave me one of those for Christmas. Sounds silly but it’s true-herbs dry faster here in Texas in that mesh dryer than in my electric dehydrator. It is so wonderful! Hope you enjoy it as much as I do mine.

    I did a late plant of zucchini (and I've never grown them b4), so I haven't had even 1 from the garden yet, but this is great for when I have our harvest :). I'm going to check out your zucchini chips too :). Since I worked for Vitamix for 8 years b4 quarantine, I love that you used yours to do this...and no, you don't have to have a dry blade, especially for zucchini flour. What you will find is that if you run the machine the 2-3 minutes that you did, the flour will heat up (as usual). Not only do you need to let the flour settle, but it needs to cool as well. If it's still warm or hot when you move to a jar, you will get moisture and mold inside. Wish I would have had this great tip to pass along when I was demonstrating. Keep up the great work! (btw, Vitamix makes a blade scraper that you can use on all blenders as well, and it helps get under those blades since they don't come out :) ). Smile and have a blessed day!

    As a time saver, you can cut them into disks for dehydration. Takes no time at all and you end up little zucchini chips which can be ground easily. Just a thought

    Then they aren't useful to me other ways - which is why I shred most because I can have all that storage all year for how I use zucchini. I rarely use disks for anything other than quick snacking. Flour I do as I need it because it stores best as whole as possible - and shreds are most useful to me.

    I have was a ninja shredder. It is a manual one that vacuum seals to counter and you have 3 cylinder blades to put in. Coarse, fine, and slicer blade. It would take jyst a few seconds to get thru. It also has a pusher so no scraped fingers

    If you are wanting flour that is less green you can peel it first and then grate. The peels can be given to chickens or pigs if you have them; go into your compost pile or be fed to soldier flies or if in an apartment can even be given to your guinea pig. This can make it more palatable if using for flour replacement.

    I'm using the electricity while I have it...til they shut the grid down. Then it woulf be the time when sit by candlelight & use a cheesegrater Without power we arecan dry them in the sun. Thank you for great video!

    There are Keto recipes that utilize shredded zucchini, eggs, and mozzarella cheese to make tortillas. I bet with a bit of tinkering, there is a way to make that powder function as flour for Keto tortillas...come on Summer! Bring in the zucchini!!!

    How about freezing shredded zucchini then thaw in strainer. The liquid seems to separate. Then dry? Haven't done. Just speculating

    HI can any vegetable be used to make a vegetable powder for cooking? if so could you do a video on this please... as plant based eater most vegetable powders here in Australia are full of additives and crap.

    Not to be used to be an supplemental flour replacement like zucchini (but all summer squash will work), but as a general vegetable powder that can be used in anything, yes, any veg will work

    Darcy, since I found you on dehydrating, I am usually watching your videos, or chopping veggies to dehydrate. Not getting much of anything else done. Thank you for motivating me to do something. Love your videos. Question: when you use your VitaMix for making powder are you using the dry blade or the wet blade? I just got a VitaMix a few months ago but didn't get the dry blade for grains. Is it needed? Keep those videos coming.

    I made the mistake of A. Using the wrong vitamix container B. Combing too much powder in the vitamix. The vitamix will boil your food by design. The blade heated up and melted my tomato powder in the middle 🤦‍♀️. Things I didn't think about until afterwards.

    Spaghetti squash last for-e-ver on the counter over winter though, so you don't need to process them to preserve. Zucchini are only good for a week or less, so it is necessary to process and preserve the somehow.

    Question: would you use the fresh to powder conversion if a recipe (Zucchini bread) calls for fresh zucchini? I am thinking about this with carrot cake too, I hate the BITS of carrot...lol.

    Powder isn't the bulk that fresh/dried would be, so it's a flavorant only at that point If you use zucchini flour for something, it's meant to be as a replacement for part of the flour - not to replace the bulk of the zucchini

    You can make bread with yellow squash too. I found some recipes online and tried it a few years ago. A little different than zucchini bread but still very good.

    I explained it in the video. And this was over the course of 2 weeks, I wasn't going to drag it out every time for a handful of zucchini. And not everyone has a food processor, so I like to show all ways to do all things.

    I didn't hear how long the dehydrating took but am assuming that it was overnight, say 10 hours maybe. With a 600watt machine that's 6kw of power at 29p per unit (UK) so nearly £1.80 for that batch. This is substantial and I'm trying to work out the actual weight of flour produced so the unit cost. Electricity is advancing in price so horribly that this has to be taken into account. Thank you for the video and all the work involved. I've just found the timing. 3 batches over 24 hours. W

    Yeah - but weigh that against having a stocked, shelf-stable pantry full of food to feed your family when prices for food skyrocket even more. I get that you guys are having an energy crisis and may need to stop doing some things, but food preservation would be very low on my list of things to get rid of. But that's my focus, may not be yours.

    You can go old school first and first let it set to remove excess water then use non electric/air drying. Since that doesn't dry as much as an electric you can then transfer for final dry in electric dehydrator for an hour or two. Or better yet, if you have used your oven for some other baking, once you remove your cake, roast or whatever put a tray of fried zucchini in to use up that residual heat while the oven cools back down which would cost you zero in electricity.
