Fishing for the kings of the reef! (Catch, clean, eat)

Ahoy legends, this week I head out with a specific species in mind, the mighty kingfish! As it turns out, fast or slow jigging, these fish don't care!
Although Kingies on jigs is my target for the day, I also cross paths with a number of other awesome offshore species just to keep me guessing! I end up keeping two excellent eating fish for the table then take them home and have a fillet table sashimi battle to see which is better!

    people often refer to Bonito as a type of tuna but they are actually a different tribe all together, all tuna/Mackerel/Bonito are in the family Scombridae but not only that but they are all in the sub family Scombrinae, in this sub family there are 4 tribes of fish Scombrini or true Mackerel (slimy/blue mackerel for us Australians) Scomberomorini or spanish Mackerel (Wahoo, Shark Mackerel, Spanish Mackerel, Spotted Mackerel, King Mackerel etc) Sardini or Bonito (Bonito, Striped Bonito, Dogtooth Tuna) Thunnini or Tuna (all the Tuna's except Dogtooth Tuna as they are a Bonito not a Tuna) after these tribes there are Genus (example Wahoo and Spanish Mackerel are different Genus) and then after Genus there is species (example in Spanish Mackerel there are Narrow barred spanish Mackerel and Spotted Mackerel) spacifically for Bonito though we get 4 types of Bonito in Australia from all 3 tribes, the Australian Bonito, the Striped Bonito, the leaping Bonito and Dog tooth Tuna, i personally cant tell the difference between Australian Bonito and Striped Bonito but for leaping Bonito if you catcha Bonito with a dotted pattern on the top instead of the stripes then its a leaping Bonito i could go through all of it but i would be here an hour but as for the Bonito and their whiter flesh then tuna this is because they are closer to the Mackerel side of the family rather then the Tuna side to the family.     A friend of mine cooked a couple of smallish bonito whole (cleaned of course) -- cavity filled with lemon, garlic and thyme -- wrapped in foil and baked until cooked through. Served on a plate, still in the foil. Unwrapping that meal was mouth-watering. It was deliciously fragrant -- and did not disappoint!

    Those are just like California Yellowtail where I'm from. Great fight, great eating and they are the best smoked. Yum!!!!!!!!!! I hear they get much bigger down under.

    Another well done video. Sammy, we catch a lot of Yellowtail in Baja, MX and San Diego. Do you know what the difference is between the King, Amberjack and yellowtail? Those king fish look and fight very similarly to a yellowtail, aka, Amberjack, they take everything from an iron jig (yoyo), surface jig or live bait. Still my favorite sashimi especially the belly, even beating fresh bluefin in my humble opinion. Keep up the killer trips and cheers from the west coast!

    Hey Sammy. Love your work. Could you do a taste comparison between kingfish that have been caught at different depths. It’s to my understanding that the fish caught from deeper have a higher fat/oil content which makes them even tastier.

    I haven't caught a legal king fish yet my biggest is 30cm but i get it as the sushi restaurant and it's delicious

    Aloha from Hawaii. I wish I was there to show you how to cook the aku belly and the back bone and make poke out of the filet for that Bonito "aku". In hawaii dried banito sells for 20 to 25.00 per pound.

    Nice work, as always. Bonito looked a little cooked in the video, and like it had blood clots in the fillet. Might have cooked himself from the core. I prefer fresh kingy for sashimi. But I prefer Mahi over kings.

    Bonito are good fresh pan fried with a bit of a crust added. just a touch of lemon or lime rind ind the crust. delicious..m

    The Kingfish or Yellowtail as we call them here in Southern California are probably the hardest fighting fish out there. Yeww 🤙🏻

    Where I live the king of the reef ( or maybe more of the wrecks) is the Amberjack, also known as reef donkeys. Very similar to kingfish in almost every way.

    If the Bonito is too strong for you, switch the wasabi for fresh minced garlic in the soy.

    Love watching your videos man I'm curious if you're able to go into detail of what to feel for or how different things feel. Knowing that your jig was messed up would save people time or knowing what to feel for when different fish hit... obviously not for all species but just the odd one or 2.

    Generally a kingy will absolutely smash ya jig, head straight for structure and you'll feel the tail beats, headshakes and you'll be hanging on for dear life after it's almost ripped the rod out of your hand, they will fight all the way up. The pearl pearch have massive bucket mouths and the take will be more timid and will feel like pulling a bucket through the water with the odd headshake here and there. Snapper bite and fight similar to kingys when fishing jigs but I've found using ocky jigs that they take it on the drop more often than not, sometimes they fight with more headshakes and less big runs, obviously this all depends on the size of the fish. Just my 2cents. These aren't massive kings considering they grow to 50kg with New Zealand holding the majority of XOS fish. In Aus a good fish is 20Kg+.

    King Fish...they look like what I would call a Yellowtail or Yellowtail Jack. Same critter? Assuming they are, just a regional naming thing. You could try a Descender for barotrauma fish. We use them a LOT around here for restricted fisheries (Yelloweye Rockfish at the top of that list). According to our National Marine Fisheries Service (NMFS) studies, even pretty blown up fish have a better than 50/50 chance using one. Light trauma and the odds go WAAAY up. Minor pain in the ass to do, but good for the fish.

    Sammy i was on a marlin/sailfish charter a few years ago in the Seychelles and the first mate and chef cooked fresh bonito creole style with finely shredded cabbage and carrot, it was absolutely yummy look it up on the web for a recipe im certain you will agree

    What's your thoughts on limits constantly be reduced by the government such as spanish mackerel and others species will be very limited of what we can catch soon if this trend continues and feed our families after spending the coin on boats and all the gear

    I don't think I've had that many genuine knots fail at all this year actually. I certainly try not to make a habit out of it! As for losing fish, it happens mate. Part of the game! Sometimes things go in your favor, sometimes they don't. Overall, I'd happily say I'm lucky enough to land more than I lose though. It would be very hard to make content if I kept losing everything.
