You had all in one: Polish Christmas Eve and Easter at the same time. :) Because beetroot soup and dumplings and dumplings with sourkrout ( you got "russian dumplings" - with white cheese and potatoes?) and mushrooms we eat for Christmas eve. And during Easter we eat żurek/ biały barszcz and white sausage :)

Pierogi with cheese, potatoes and onion are called Ruthenian pierogi. Saint Jacek Odrowąż brought them to the crown from Red Ruthenia. Red Ruthenia is today's Podkarpackie Voivodeship and part of western Ukraine. In Polish they are called pierogi ruskie. The word Ruski became a synonym for Russian in everyday language in the early 20th century. That's why people sometimes mistranslate the name of these dumplings as Russian dumplings. Ruthenia - Ruś isn't Russia - Rosja. We call these colorful eggs pisanki, kraszanki, etc. Each region has a different decorating method. In the past, natural dyes such as onion peels were used. People used to carve very intricate patterns on colorful eggs at home. Eggs are a symbol of eternally reborn life.
